Grapes, lab coats, boots and wine: research and innovation in oenology and viticulture, GIENOL 2026

Abstract

This presentation provides an overview of the studies and results presented at the GIENOL Congress, held in Córdoba from 13 to 16 April 2026, which reflect the latest advances in Spanish research in viticulture and oenology.

Taken together, these studies portray a sector seeking a balance between tradition and technological development. Growing attention is being paid to wine stability, particularly oxidation and haze formation, as well as to achieving a better understanding of the behaviour of native grape varieties under specific winemaking conditions. Current research is increasingly oriented towards precision oenology, in which rigorous analytical control is used to ensure final product quality while addressing the challenges posed by climate change and evolving market demands. Key areas of interest include oxidation management and wine longevity, microbiology and the use of new microorganisms, the chemistry of wine instabilities, and sustainability and waste valorisation.

The congress highlighted the emergence of an increasingly analytical and predictive approach to oenology. This approach aims to mitigate the effects of the climate crisis, including high alcohol levels, changes in pH and unbalanced ripening, through the use of biotechnological tools and advanced monitoring systems.
