In agriculture including viticulture demand for organically grown crops has developed exponentially in the last few decades. Particularly in the wine sector organic and biodynamic management system are gaining more and more importance and some of the most prestigious wineries have converted to organic or biodynamic viticulture.
The successive increase of the average temperature associated with climate change seriously affects the managing of vineyards, in both the vine growth development and the composition and grape quality.
Grapevines cv. BRS Carmem (Vitis vinifera X V. labrusca) were managed in organic or biodynamic system and compared for the following photosynthetic parameters: CO2 assimilation, Rubisco efficiency, intracellular CO2 concentration, water use efficiency, Transpiration, and Stomatal conductance throughout a day (9, 12 and 17 h) 15 months after planting.

Over the past ten years, climate studies at local scale have been developed in winegrowing areas to improve terroir characterization. It is amongst the coldest (annual average of 13.42 ºC, 1832.36 hours of solar radiation and 1680.23 mm of precipitation) and the highest (715 - 1638 m) Brazilian’s viticultural regions, with hilly relief (43% of slopes between 20 - 45% of declivity, with no preferred direction).
