Qualité des vins et Terroirs. Incidence du milieu naturel sur la composition aromatique des vins

Abstract

Les vignobles septentrionaux produisent des vins à haute richesse aromatique. Les vins d’Alsace sont appréciés pour la diversité de leurs arômes dont la typicité a été pendant longtemps jugée principalement en fonction du cépage d’origine. Les viticulteurs alsaciens ont cependant largement pressenti l’importance de l’environnement de la vigne sur la qualité des vins. Des efforts sont réalisés pour tenter d’harmoniser de façon raisonnée l’interaction entre le milieu naturel et le matériel végétal dans la perspective de développer le caractère du cépage à travers l’expression fine du terroir et rendre plus inimitable encore la qualité et la typicité des vins produits en Alsace. Il faut rappeler que le concept de “terroir” prend tout son sens face à la situation remarquable du vignoble alsacien doté de deux atouts majeurs, l’un climatique, l’autre géographique. L’Alsace jouit d’un climat à influences continentales marquées propice au fonctionnement de la plante, notamment en ce qui concerne les mécanismes de biosynthèse des constituants aromatiques d’origine variétale spécifiques des cépages aromatiques. Par ailleurs, ce vignoble implanté sur les contreforts de la fracture rhénane, est caractérisé par la forte diversité de ses situations écogéopédologiques qui contribuent à faire varier le potentiel aromatique des raisins et des vins.

Les travaux les plus importants concernant l’approche intégrée des terroirs, en relation avec l’originalité des vins, ont été effectués dans la Moyenne Vallée de la Loire (1,2). Après certaines adaptations méthodologiques, ils ont servi de base à un travail destiné à mettre en évidence les composantes naturelles des principaux terroirs alsaciens (3). La présente étude consiste à montrer, au moyen de l’analyse sensorielle des vins associée à l’analyse physico-chimique de leurs composés d’arômes, la variation potentielle de la qualité organoleptique de 5 vins à gewurztraminer dont la seule différence réside dans l’origine des parcelles.

ASSESSMENT OF ‘DOLCETTO’ GRAPES AND WINES FROM DIFFERENT AREAS OF OVADA DOCG

Dolcetto (Vitis vinifera L.) is one of the traditionally cultivated varieties in Piedmont (north-east Italy). Dolcetto wines have long been associated with local consumption and they are little known internationally. In particular, the Ovada area (south-east Piedmont), even if it represents a small share of the regional PDO Dolcetto production, is one of the oldest and vocated territory, giving wine also suitable for aging. In this study, the basic composition and phenolic content of Dolcetto grapes for Ovada DOCG wines have been investigated in three different vintages (2020-2022), as well as the main aspects of the derived commercial and experimental wines (basic parameters, phenolics, volatile compounds, sensory properties).

Does a white wine smell like red wine if you color it with red food coloring? A study by Morrot, Brochet, and Dubourdieu (2001, Brain and Language) suggests so. Subjects perceived red wine odors when tasting white wine that had been colored red. The perceived odor profile of the colored white wine became similar to that of a red wine. However, the forced-choice procedure used by Morrot et al. has some methodological shortcomings. Here, we used an alternative method (a rating procedure) to evaluate the presented wines.

Spatial determination of areas in the Western Balkans region favorable for organic production

In problematic conditions for production of grapes and wine caused by the COVID-19 pandemic and the resulting occurrence of wine surpluses, producers are increasingly turning to the innovative viticulture and winemaking of products that are more appealing to the market and the consumers. On the other hand, consumption of the food safety or organic products, and therefore of organic grapes and wine, is increasingly common in the world, in particular in Europe. The Regional Rural Development Standing Working Group (SWG RRD), as a regional intergovernmental organization gathers actors in the viticulture and winemaking sector from states and territories of the Western Balkans (South-East Europe) in the Expert Working Group for Wine, with the aim of improving viticulture and winemaking in this region through joint activities. In accordance with the aforementioned, the SWG RRD is working on advancing organic production of grapes and wine, and on recognition of specificities of the terroir of wine-growing areas in Western Balkans. In addition, as part of the project “Facilitation of Exchange and Advice on Wine Regulations in Western Balkan Countries” helmed by the German Federal Ministry of Food and Agriculture, in addition to harmonization of relevant legislation with EU regulations, efforts are being invested towards recognition of organic wines. Within activities and project implemented by this organization, expert analyses and scientific research of the terroir of Western Balkans were carried out, and some of the results are presented in this paper.
