Les terroirs viticoles ont une histoire

Abstract

L’historien repart d’une définition scientifique, rigoureuse et récente du terroir viticole. “Un terroir viticole est composé de plusieurs unités homogènes : éléments géologiques et pédologiques (texture, granulométrie, épaisseur, nature minéralogique, composants chimiques), géomorphologiques (altitude, pente, exposition), climatologiques (pluviométrie, température, insolation)”. Absent de cette définition, l’homme est heureusement réintroduit un peu plus loin. En associant la viticulture et la vinification, il forme un “couple” avec le terroir et ce couple. L’historien se propose de réexaminer les relations de ce tout au long de deux millénaires d’histoire. Il veut montrer que le choix de localisation des vignes, celui des cépages et celui des techniques de viticulture ne furent pas ou peu guidés, jusqu’à une période récente, par des qualités ou des virtualités objectivement reconnues à des terroirs précis. Des contraintes et des motivations extérieures au milieu physique ont été beaucoup plus déterminantes. Elles furent économiques, tout particulièrement commerciales, mais aussi politiques, juridiques, sociales, voire culturelles.

Lead levels in fortified wines

AIM The main lead exposure route is the intake of contaminated food, water, and alcoholic beverages, in particular wine. At the gastric level, Pb is transformed into a soluble compound which, when conveyed into the bloodstream, is the long-term cause of saturnism, intoxication with neurotoxic, nephrotoxic and hematopoietic effects, and with the neurological developmental delay of children. Pb is classified by the International Agency for Research on Cancer as a 2A class, possible carcinogenic to humans. Comparison of tannin analysis by protein precipitation and normal-phase HPLC

Tannins are a heterogenous class of polymeric phenolics found in grapes, oak barrels and wine. In red wine tannins are primarily responsible for astringency, though they also have an important role in reacting with and stabilizing pigments. There are numerous sub-classes of tannins found in wine but they all share structural heterogeneity within each sub-class, with varied polymer composition, configuration and length.

Numerous methodologies exist for the quantification of tannins, however, protein precipitation using bovine serum albumin has proved itself useful due to its strong correlation to the sensory perception of astringency and the basic instruments required for the method. Though the method can yield valuable insights into tannin composition, it cannot be automated easily and necessitates well-trained personnel.
