Increasing the sustainability of the viticulture and winemaking sector in the Republic of Moldova through the use of newly selected grape varieties

Abstract

The global wine industry is increasingly feeling the impact of the climate crisis. This challenge drives oenologists to identify new grape varieties resistant to local biotic and abiotic factors and develop technological solutions to maintain wine quality while reducing production costs.

The conducted research aimed to study the technological potential of newly selected grape varieties for the production of high-quality dry white wines. The research was carried out at the Scientific-Practical Institute of Horticulture and Food Technologies (currently NIARAVM, reorganized in 2025) between 2022 and 2023. The study focused on dry white wines obtained from newly selected grape varieties: Floricica, Viorica, Legenda, and Riton. The research was conducted using a combination of traditional and modern methods. Based on the conducted research, it was established that under the challenging climatic conditions of the studied harvest years, the newly selected varieties: Viorica, Floricica, Legenda, and Riton demonstrated a high potential for sugar accumulation in grapes and optimal concentrations of titratable acids for obtaining high-quality dry white wines.

The wines obtained from these grape varieties are characterized by a high glycerol content and non-reducing dry extract. The study also made it possible to identify the main volatile aromatic compounds and their respective concentrations. Additionally, the aromagrams of volatile complex in the dry white wines from the newly selected varieties Floricica, Legenda, Viorica, and Riton were obtained, which can serve as aromatic passports of each grape variety.

Renforcement de la soutenabilité du secteur vitivinicole de la République de Moldavie par l’utilisation de cépages de sélection nouvelle

Résumé. L’industrie vitivinicole mondiale est de plus en plus affectée par les changements climatiques.  Face à ces défis, les œnologues cherchent à identifier de nouveaux cépages résistants aux facteurs biotiques et abiotiques locaux, des solutions technologiques pour maintenir la qualité des vins et réduire les coûts de production.

Le but de la recherche était d’étudier le potentiel technologique des cépages de sélection nouvelle pour la production de vins blancs secs de qualité. La recherche a été réalisée au sein de l’Institut Scientifique et Pratique d’Horticulture et de Technologies Alimentaires (actuellement INRAAMV, réorganisé en 2025), au cours des années 2022-2023. Les objets de recherche étaient les vins blancs secs obtenus à partir de cépages de sélection nouvelle: Floricica, Viorica, Legenda et Riton. La méthodologie employée combinait des méthodes traditionnelles et modernes. Les résultats ont montré que, dans les conditions climatiques difficiles des années de récolte étudiées, les cépages de sélection nouvelle: Viorica, Floricica, Legenda et Riton se sont distingués par un fort potentiel d’accumulation de sucres dans les raisins et des concentrations optimales d’acides titrables pour l’obtention de vins blancs secs de qualité.

Les vins obtenus de ces cépages se caractérisent par une teneur élevée en glycérol et en extrait sec non réducteur. L’étude a également permis d’identifier les principaux composés aromatiques volatils et leurs concentrations respectives. En outre, des aromagrammes du complexe volatil des vins blancs secs Floricica, Legenda, Viorica et Riton ont été obtenus, pouvant servir de ”passeports aromatiques” de chaque cépage.
