The influence of native flora on Argentine white terroir cv. Torrontes Riojano

Abstract

The main objective of this paper is to establish considerable differences between wines from three wine areas or terroir, made with cv Torrontes Riojano.

Seventy-one volatile components were used as variables, obtained by means of solid-liquid extraction, quantification by Gas Chromatography with Flame Ionization Detector (FID), and the use of a multivariate statistical model of classification.

We have been able to conclude that the components which differentiate geographical areas in wines come from native flora which is near the vineyards, either owing to cross-pollination, dispersion both of resin and of pollen of the Larrea genus (jarilla), the wind or the solubility of the volatile components found in the soil.

Does the location of wine cellars have significant impact on the evolution of madeira wine polyphenols?

Unlike table wines, Madeira Wine (MW,17-22% ABV) benefits from a long aging period under thermo-oxidative aging conditions, during which it gains its unique and complex flavour. A broad study is ongoing and aims to assess if the differences in the storage conditions impact significantly the evolution of MWs during canteiro aging. Considering that polyphenols have a significant role in the wine aging, we intended to appraise if there are significant differences in the evolution trends of polyphenols of MWs aging in different cellars under canteiro. Different MWs were aged into brand-new oak casks in two different wine cellars, one in Funchal (B) and other in Caniçal (Z). Temperature and humidity data were sensor recorded. RP-HPLC-DAD was used to perform the identification and quantification of polyphenols [1]. CIELab parameters were also assessed, using an UV-Vis spectrophotometer.

Water deficit differentially impacts the performances and the accumulation of grape metabolites of new varieties tolerant to fungi

The use of resistant varieties is a long-term but promising solution to reduce chemical input in viticulture. Several important breeding programs in Europe and abroad are now releasing a range of new hybrids performing well regarding fungi susceptibility and producing good quality wines. Unfortunately, insufficient attention is paid by the breeders to the adaptation of these varieties to climatic changes, notably to the increased climatic demand and water deficit (WD). Thus, prior to the adoption of such varieties by the wine industry in Mediterranean regions, there is a need to consider their suitability to WD. This study aimed to characterize the different drought-strategies adopted by 6 new resistant varieties selected by INRAE in comparison to Syrah. To allow the assessment of long-term impacts of WD, field-grown vines were exposed to contrasted WD from 2018 to 2021 under a semi-arid Mediterranean climate. A gradient of WD was applied in the field and controlled through plant measurements at the single plant level. Grape development was non-destructively monitored to determine the arrest of berry phloem unloading. The impacts of WD on berry composition, including water, primary metabolites (sugars, organic acids), secondary metabolites (anthocyanins, thiols precursors) and main cations contents, were assessed at this specific stage. Results showed different varietal responses during the year and inter-annual acclimation in terms of plant water use efficiency, biomass accumulation, as well as yield components and berry composition. WD differentially reduced the accumulation of primary metabolites at plant and berry levels, but it little changed their concentrations in the fruits at the ripe stage. Moreover, WD differentially impacted the accumulation of secondary metabolites and major cations between the varieties. In the talk, we’ll present the main results regarding the WD impacts on fruit metabolites and enlarge the reflection about the practical assessment of the grapevine acclimation to WD.

X-ray tomography: a promising tool to assess the selection of good quality grafted vines

The production of grated vines is a complex process from grafting to final sorting in nurseries. To reach the market, grafted grapevines must meet three criteria by law in France: resistance to a manual graft union test (named thumb test), a minimum number of three roots and a woody shoot of at least 2 cm long.

Evaluation of mannoprotein formation by different yeast strains by enzymatic analysis of mannose and tribological estimation of astringency

A positive role of mannoproteins on wine stability and red wine mouth sensations has been widely described. Commercial mannoproteins are available and some yeast strains are offered with a higher formation of mannoproteins.

IMPACT OF NEW BIO STIMULANTS ON GRAPE SECONDARY METABOLITES UNDER CLIMATE CHANGE CONDITIONS

In a context of climate change and excessive use of agrochemical products, sustainable approaches for environmental and human health such as the use of bio stimulants in viticulture represent a potential option, against abiotic and biotic threats. Bio stimulants are organic compounds, microbes, or a combination of both, that stimulate plant’s vital processes, allowing high yields and good quality products. In vines, may trigger an innate immune response leading to the synthesis of secondary metabolites, key compounds for the organoleptic properties of grapes and wines.
