Typology of wines in touch with environmental factors of terroirs and grapevine. Application to the Chinon vineyard

Abstract

According to the vintage, it may be difficult for vine growers to make a decision regarding the type of wine in relation with the soils. The present work aims at proposing typology of wines to the Chinon growers, as a basis for reflection on the wine type in relation with the terroir units and the vintage water supply conditions.
In order to bring out factors associated to a wine structure, a first classification was established thanks to a multiple factorial analysis (MFA), taking into account three qualitative variables resulting from a survey on 506 cultural units of the Chinon vineyard. This first classification was then linked to a second one obtained through an ascendant hierarchical classification (AHC) carried out on an experimental network of the INRA-UVV unit of Angers (49-France). This network of 14 plots, distributed on different terroir units in the Chinon, Bourgueil and Saumur AOC, was monitored for physiological and meteorological data over the 2002-2005 period. The AHC used the data for a humid year (2004) and a dry year (2005). For each year, the experimental plots were grouped into three classes according to their pedoclimatic profiles.
By crossing the two classifications it was possible to elaborate a typology of the Chinon wines in relation with the environmental factors of the terroir units and the water supply conditions of the vintage.
This method, based only on two reference years and a wine typology for the Cabernet franc variety, was successful for analyzing the conditions for the elaboration of a given type of Chinon wine in relation to a precise cartography of the terroir units. This prospective process needs to be generalized.

Yeast diversity in Vitis labrusca l. Ecosystems

Although there are detailed studies on the microbiota of Vitis vinifera L. grapes, little is known about the diversity of yeast communities present in non-vinifera Vitis ecosystems (i.e., grapes and spontaneously fermenting grape musts). Potentially scientific and/or enological valuable yeast strains from these non-vinifera Vitis ecosystems might never be isolated from V. vinifera L. Using a standard culture-dependent strategy, we studied the population of yeast species during initial stages of spontaneous fermentation of V. labrusca L. (Isabella) grape musts. Rare non-Saccharomyces yeast species were recognized in Isabella, including Candida azymoides, Pichia cecembensis, Candida californica, Candida bentonensis, Issatchenkia hanoiensis and Candida apicola.

Impact of yeast strains on wine profiles of nine PIWIs: focus on volatile thiols

Disease resistant grapevine varieties (PIWI) are increasingly important for sustainable wine production, yet the impact of different yeasts on their wine profiles remains poorly studied. In this study, nine white interspecies varieties (i.e., caladris blanc, fleurtai, hibernal, johanniter, muscaris, sauvignon kretos, soreli, souvignier gris, and voltis) grown at the faculty of agriculture, university of Zagreb (Croatia) were vinified with three different saccharomyces cerevisiae yeasts (control strain, zymaflore x5, and zymaflore xarom).

Understanding the expression of gene families involved in anthocyanin biosynthesis during berry ripening: Tannat as a case study

The quality of wine is assessed, among other things, by its color, which is mainly due to its anthocyanin content. These pigments are polyphenols that give red, purple and blue hues depending on the relative proportion of anthocyanins produced by the action of flavonoid 3’5′ hydroxylase (delphinidin-3-glucoside, petunidin-3-glucoside, malvidin-3-glucoside) or flavonoid 3′ hydroxylase (cyanidin-3-glucoside, peonidin-3-glucoside). To study the genes involved in this biosynthetic pathway, we focused on Vitis vinifera cv. Tannat, known for producing wines with higher anthocyanin content and darker purple color compared to most red grape varieties. In this work, we have performed RNA-Seq analysis of skins during berry development, taking green and red berries at 50% veraison as separate samples, as an experimental strategy to focus on the differential expression of genes of interest.

Isotope composition of wine as indicator of terroir spatial variability

The goal of this work was to determine the spatial variability of terroir using the isotope composition of wine. Carbon (δ13C) and oxygen (δ18O) stable isotope composition was measured in wines from Tempranillo (Vitis vinifera L.) vineyard, located in Rioja Appellation (Spain).
