Produce wines with no quantifiable phytosanitary residues – Impact of washing grapes?

Abstract

Consumer expectations are increasingly shifting towards “residue-free wines.” However, from an analytical standpoint, “zero” does not exist. Laboratories often use the quantification limits of analysis methods to signify ‘zero.’ Improved techniques now allow for the quantification of levels that were previously undetectable. This is why we prefer to use the term “unquantifiable residue” rather than “absence of residues.” Can we produce wines today without quantifiable residues? The R&D work carried out by IFV to answer this question confirms the presence of active substances in wines at low levels, well below the EU maximum residue limits. Some of these substances can still be reduced through viticultural measures (such as positioning molecules in treatment schedules according to their “tracing power”) or oenological methods (such as adsorption by certain technological aids or filtering media). However, others are more resistant and require additional investigations to try to reduce them. What is the impact of washing grapes on reducing residue levels in wines? Several grape cleaning processes were tested, and the results highlight a significant impact of washing grapes on reducing residue levels in musts and wines. However, this impact varies depending on the molecules and processes used. Immersion of the grapes is more effective than sprinkling, and a mechanical effect, such as gas stirring, is necessary for maximum efficiency. A focus is placed on the impact of this operation on two molecules: copper and phosphonic acid. Reductions of around 50% in the must are observed with copper. On the other hand, phosphonic acid is not impacted at all. Wine grapes are one of the rare fruits not washed before processing. Immersing grapes in must, whether recycled or not, is nevertheless a process developed on an industrial scale, for example, to sort berries according to their density. Our work confirms that washing grapes also proves effective in reducing phytosanitary products. It should be noted, however, that for high concentrations, no active substance is eliminated. On the other hand, for low concentrations, this operation can make it possible to go below the analytical limits. Combined with other measures, it can help achieve the objective of no quantifiable residues in wines.

Produire des vins sans résidus phytosanitaires quantifiables. Impact du lavage des raisins ?

L’attente des consommateurs s’oriente nettement aujourd’hui vers des « vins sans résidus ». Or d’un point de vue analytique, le « zéro » n’existe pas. Ce sont souvent les limites de quantification des méthodes d’analyses qui sont utilisées par les laboratoires pour signifier le « zéro ». L’amélioration des techniques permet aujourd’hui de quantifier des teneurs qui n’étaient pas mesurables auparavant. C’est pourquoi, nous préférons utiliser les termes « résidu non quantifiable » plutôt que « absence de résidus ». Peut-on produire aujourd’hui des vins sans résidus quantifiables ? Les travaux de R&D menés par l’IFV pour répondre à cette question confirment la présence de substances actives dans les vins à des teneurs faibles et très en dessous des limites maximales de résidus de l’UE. Certaines peuvent encore être réduites par des leviers viticoles (positionnement des molécules dans les calendriers en fonction de leur « pouvoir traçant ») ou œnologiques (adsorption par certains auxiliaires technologiques ou médias filtrants). D’autres sont plus récalcitrantes et demandent des investigations supplémentaires pour tenter de les réduire. Quel est l’impact du lavage des raisins sur la réduction des résidus dans les vins ? Plusieurs procédés de nettoyage des baies ont été expérimentées, les résultats mettent en évidence un impact non négligeable du lavage des raisins sur la diminution des teneurs en résidus dans les moûts et les vins. Toutefois, celui-ci reste variable selon les molécules et les procédés utilisés. L’immersion des raisins est plus efficace que l’aspersion et un effet mécanique par brassage au gaz par exemple, est nécessaire pour une efficacité maximale. Un focus est réalisé sur l’impact de cette opération sur deux molécules : cuivre et acide phosphonique.  Des réductions de l’ordre de 50% dans le moût sont observées avec le cuivre. En revanche l’acide phosphonique n’est pas du tout impacté. Le raisin de cuve est l’un des rares fruits non lavé avant sa transformation.  L’immersion de raisins dans du moût, recyclé ou non est néanmoins un procédé développé à l’échelle industrielle, par exemple pour trier les baies en fonction de leur densité. Nos travaux confirment que le lavage des raisins s’avère également efficace sur la réduction de produits phytosanitaires. Précisons toutefois que pour des concentrations élevées, aucune substance active n’est totalement éliminée. En revanche pour des concentrations faibles, cette opération peut permettre de descendre en dessous des limites analytiques. Combinée à d’autres leviers, elle peut aider à atteindre l’objectif d’absence de quantification de résidus dans les vins.

Elaborar vinos sin residuos fitosanitarios cuantificables. Impacto del lavado de uvas?

Las expectativas de los consumidores hoy se dirigen claramente hacia los “vinos sin residuos”. Pero desde un punto de vista analítico, el “cero” no existe. A menudo son los límites de cuantificación de los métodos de análisis los que los laboratorios utilizan para significar “cero”. La evolución de las técnicas analíticas permite ahora cuantificar niveles que antes no eran mensurables. Por eso preferimos utilizar el término “residuo no cuantificable” en lugar de “ausencia de residuo”.  Podemos hoy producir vinos sin residuo cuantificables ? El trabajo de investigation y desarrollo llevado a cabo por el IFV para responder a esta pregunta confirma la presencia de sustancias activas en los vinos en niveles bajos y muy por debajo de los límites máximos de residuos de la UE. Algunas todavía pueden reducirse mediante palancas vitícolas (posicionamiento de las moléculas en calendarios según su “poder de trazabilidad”) o palancas enológicas (adsorción mediante determinadas ayudas tecnológicas o medios filtrantes). Otros son más recalcitrantes y requieren investigaciones adicionales para intentar reducirlos.  Cuál es el impacto del lavado de la uva en la reducción de residuo en los vinos ? Se han probado varios procesos de limpieza de bayas, los resultados resaltan un impacto significativo del lavado de uvas en la reducción de los niveles de residuo en mostos y vinos. Sin embargo, esto sigue siendo variable según las moléculas y los procesos utilizados. Sumergir las uvas es más eficaz que asperjar y es necesario un efecto mecánico mediante agitación con gas, por ejemplo, para lograr la máxima eficacia. Se centra la atención en el impacto de esta operación sobre dos moléculas : el cobre y el ácido fosfónico. Con el cobre se observan reducciones de alrededor del 50% en el mosto. Por el contrario, el ácido fosfónico no se ve afectado en absoluto. Las uvas para vino son una de las pocas frutas que no se lavan antes de procesarlas. Sin embargo, la inmersión de la uva en mosto, reciclado o no, es un proceso desarrollado a escala industrial, por ejemplo para clasificar las bayas según su densidad. Nuestro trabajo confirma que el lavado de la uva también es eficaz para reducir los productos fitosanitarios. Sin embargo, tenga en cuenta que, en concentraciones elevadas no se elimina por completo ninguna sustancia activa. Por el contrario, para concentraciones bajas, esta operación puede permitir descender por debajo de los límites analíticos. Combinado con otras palancas, puede ayudar a lograr el objetivo de no cuantificar los residuos en los vinos.

To characterize a wine, the most frequently used criteria describe its color, its origin, the grape varieties from which they come, or even for white wines its residual sugar content (dry, semi-dry, sweet). In france, the system of appellations of origin set up in 1919 was initially based solely on the notoriety and origin of the wines. But given the unfavorable consequences that this lack of details generated, the public authorities quickly integrated in 1927 into the “capus” law criteria for access to designations of origin, relating to the specific characteristics of the soils of the vineyards and the grape varieties used, in particular exclusion of interspecific hybrid varieties. Validation of a method for the determination of volatile compounds in in spirituous beverages using contained ethanol as a reference substance

The results of experimental studies of the method based on the usage of ethyl alcohol as an internal standard for the direct determination of volatile compounds in wines and others alcohol contained products are presented. The method was validated in terms of precision, accuracy, limits of detection and quantification (lod and loq), linearity, and robustness.

Oenological potential of wines and agronomical characterisation of grapes from five white resistant Italian varieties at Serra Gaúcha, Southern Brazil

Rio grande do sul is the main grape producing state in Brazil, with the largest wine-growing area, responsible by 90% of the national production of wines and grape juices. Serra Gaúcha is the main vitivinicultural region, where around 15% of the area is destined to produce wines from vitis vinifera L. grapes. This region presents high rainfall during the grape maturation cycle, a factor that leads to great risk of attacks by fungal pathogens. the use of resistant varieties can reduce the cost and quantity of spraying, improving wine quality, focusing on a sustainable vitiviniculture.
