Successful training on responsible wine consumption in Germany

Abstract

Vocational school seminars on “Wine consumption between enjoyment and risk” are part of the German implementation of the international prevention programme Wine in Moderation. In addition to basic information on legal issues, such as applicable laws (Youth Protection Act, alcohol regulation in road traffic), the seminars also provide self-regulatory rules of wine advertising as well as health effects of the use and abuse of alcoholic beverages in general and wine in particular. By means of questionnaires on the basic knowledge of the vocational students, the knowledge was assessed before the seminar (T1), immediately afterwards (T2) and about 6 months later (T3). The results of the last three years, as well as those of previous years, speak for the sustainable success of these information events.

Chemical affinity and binding capacity between pre-purified Cabernet-Sauvignon/Merlot anthocyanins and salivary proteins monitored by UHPLC Q-ToF MS analysis

Apart from pro(antho)cyanidins and tannins, other phenolic compounds in wine or grapes have been shown to interact with salivary proteins and may contribute to overall sensory in-mouth sensations [1, 2]. Anthocyanins are the dominant phenolics in red wine and grape skin [3] , so it is expected that they come into contact and interact with salivary proteins after ingestion.

A look back at 20 years of exploring the future of the vines and wines sector

What if, in 25 years, most wines were dealcoholized and flavored ? What if vines were only cultivated to combat erosion, store carbon, and provide anthocyanins…? What if climate change completely changed the list of vine varieties cultivable for wine production in France? What if food stores had completely disappeared in favor of virtual platforms? And if… because the long-term future is not predetermined and therefore not knowable, because the future is open to several possibilities, because the future does not emerge from nothing but from the present which conceals heavy trends and weak signals, prospective approaches make it possible to consider the room for maneuver that actors have to promote the advent of a future, which we can hope to be chosen, at least in part.

Understanding wine as a sensory, emotional, and cognitive experience to promote and communicate conscious consumption

In the complex scenario that the wine industry and its promotion are currently facing, this research proposes a theoretical expansion of the traditional model used to understand the wine experience, namely the classic sensory, emotional and cognitive triad, moving toward a multidimensional approach that also incorporates cultural, symbolic and contextual dimensions in order to comprehend the conscious experience.
