Il turismo del vino: dalla logica individuale a quella di distretto

Abstract

In alcuni lavori condotti alcuni anni or sono, abbiamo analizzato per un verso le tendenze della domanda di prodotti enologici, ed il comportamento del consumatore, e per un altro verso le motivazioni alla base delle scelte dell’enoturista, ovvero di colui che va per vigne e cantine per fruire di risorse enogastronomiche.
E’ emerso un quadro vasto, di persane che cercano di entrare in contatto con un territorio ed un paesaggio composta da clima, arte, elementi umani e quant’altro fa parte dell’ambiente in senso lato, oltre che naturalmente dalle risorse primarie di natura strettamente enogastro­nomica. Entrambe le analisi hanno inteso porre in evidenza il ruolo della domanda, come elemento cardine su cui si deve posizionare l’offerta nel rispondere alle esigenze dell’uten­za. In questa sede si vuole, partendo dal territorio quale ambito di riferimento di tutte le con­figurazioni del “prodotto enoturistico”, entrare nel dettaglio degli elementi tipici dell’offer­ta enoturistica, evidenziandone i punti di forza attraverso una logica di tipo aggregativo, o di rete, altrimenti definita di tipo distrettuale.

MICROFLUIDIC PLATFORM FOR SORTING YEAST CELLS ACCORDING TO THEIR MORPHOLOGY

In this work we briefly present a microfluidic device aiming to sort yeast cells according to their morphology. The technology is based upon microfluidic chips made out of Polydimethylsiloxane and glass using soft lithography processes and replica molding. The microfluidic device was used for encapsulating single yeast cells in liquid droplets containing growth medium. Liquid droplet containing yeast cells were sorted using a real time imaging and decision-making process.

Preliminary results of the effect of post veraison pre-pruning on grape and wine composition in Tannat and Merlot

The seasonal’s climatic conditions determine the composition of grapes at harvest as they affect the vine’s physiology and development. High temperatures during the grape ripening period cause a high accumulation of sugars and degradation of fruit acidity ,and alter the synthesis of polyphenols. Therefore, some vineyard management can be applied in order to modify grapevine impact on climate variability. One example is the pre-pruning at the beginning of grape ripening, which can delay the ripening period and modify the composition of the grapes at harvest. This work aims to evaluate the pre-pruning field technique on yield components and alcohol content in wines of Tannat and Merlot varieties.

Premiers résultats d’une étude des caractéristiques analytiques et sensorielles de vins de Syrah selon leur terroir

A set of Syrah plots covering a wide range of terroirs distributed in the vineyards of the Rhone Valley and the Mediterranean South is examined through their oenological and sensory characteristics. The multidimensional analysis of data leads to the following groupings: (1) A group of unstructured wines with a simple aromatic profile dominated by fruity-floral notes; they come from plots where the ripening conditions have been disturbed by unfavorable climatic conditions, or an excess harvest.

The use of pulsed fluorescence detector to quantify free SO2 in wines via the headspace

Pulsed fluorescence SO2 analyzers are widely used for atmospheric monitoring. They are accurate, portable, sensitive and their price are reduced compared to advanced techniques like gas chromatography with sulfur chemiluminescence detection (GC-SCD).
