Proposta per un parco produttivo agrovitivinicolo dei “colli piacentini”

Abstract

Le Dipartimento di Progettazione dell ‘Architettura del Politecnico di Milano et l’Istituto di Viticoltura della Facoltà d’Agraria di Piacenza dell’Università Cattolica del Sacra Cuore, ont elaboré une proposition pour réaliser, dans l’aire de colline de la province de Piacenza, un Parco Produttivo Agrovitivinicolo. Le but est de favoriser une organisation économique et d’ambiance de l’espace rural de façon à mettre en relation le territoire avec ses ressources, le système des entreprises et les centres de recherche et de développement, afin de poursuivre de nouveaux objectifs plus avancés en termes de qualité de produit et de con­servation des agroécosystèmes. Il y a en effect de strictes relations entre modernisation de l’agriculture, sauvegarde du milieu et developpement intégré du territoire. La proposition du P.P.A. se rencontre positivement en la presence de spécifications locales adressées à l’innovation, comme les structures universitaires et de recherche, les entreprises agroviticoles conduites par de hauts niveaux d’entreprenariat, la présence d’un territoire, celui de la colline, à vocation caractéristiques pédologiques, morphologiques et clima­tiques particulières, à la culture du raisin et, par valeurs de paysage et de culture exeptionelles, au developpement du tourisme innovatif, comme l’éco-tourisme e le tourisme rural.

Correction de la teneur en alcool des vins par évaporation partielle sous vide en cours de fermentation alcoolique

Climate change has become a reality that is becoming more and more apparent every day, with changes in the physico-chemical composition of grapes and an increase in the alcohol content of finished wines. These higher alcoholic degrees are not without consequences for the success of alcoholic and malolactic fermentation. Correcting the alcohol content (-20% of the initial alcoholic strength) is also part of an approach designed to meet consumer expectations for healthier, lighter or lower-alcohol wines (9 to 13% vol.). Correcting the alcohol content of wines also rebalances the mouthfeel by reducing the alcohol’s burn.

Lead levels in fortified wines

AIM The main lead exposure route is the intake of contaminated food, water, and alcoholic beverages, in particular wine. At the gastric level, Pb is transformed into a soluble compound which, when conveyed into the bloodstream, is the long-term cause of saturnism, intoxication with neurotoxic, nephrotoxic and hematopoietic effects, and with the neurological developmental delay of children. Pb is classified by the International Agency for Research on Cancer as a 2A class, possible carcinogenic to humans. In an opinion on possible health risks, CONTAM considered that cereals, vegetables, drinking water, and wine give a greater contribute to dietary exposure to Pb in Europe. Large quantities of wine, beer, and other alcoholic products drinking can increase daily Pb intake above the maximum permitted levels.

However, to date a global analysis providing a comprehensive overview of the ecological impacts of viticultural practices on soil biological quality is missing.
