Towards a European data basis based of advanced multi-isotopic signatures and artificial intelligence: the wine in blue project

Abstract

Major and trace elements are essential for the development of grapes used for the wine. They are primarily originating from the soil. Some elements are also seldomly added during the wine making process. Therefore, the largest spectrum of major, trace and ultra-trace elements in the final wine product is a good signature of its geographical origin. In the frame of the european tracewindu, we have developed a very original multi-isotopic dilution method using triple quadrupole icp/ms. This method generates high precision measurements on all elements, major and traces. We are currently now promoting a european data basis, based on high precision multi-isotopic signatures. It now allows a very high precision and detailed geographical origins of the wines included in the data basis in continuous growth. The data is sorted and management is promoted via artificial intelligence. The main objective of the data basis in, promoted in a joined project between cnrs/uppa, ut2a (france) and the ai society dunavnet (Serbia). The objectives of this data basis project wine in blue are for the use of the wine makers providing: “terroir” signatures, geographical localization, advanced tools for traceability and the fight against fraud, detailed wine quality follow up over time, integration of the impact of climate changes. We will present the current achievement of the “trace in blue” project, size of the growing data basis, its original development and data management strategies, and the current achievement. We will discuss as well on the original opportunities at the european level has well at on its current limitations.

Vers une base de données européenne basée sur des signatures multi-isotopiques avancées et l’intelligence artificielle : le projet “wine in blue”

Les éléments majeurs et les oligo-éléments sont essentiels au développement des raisins utilisés pour le vin. Ils proviennent principalement du sol. Certains éléments sont également rarement ajoutés pendant le processus de vinification. Par conséquent, le plus grand spectre d’éléments majeurs, traces et ultra-traces dans le produit final du vin est une bonne signature de son origine géographique. Dans le cadre du tracewindu européen, nous avons développé une méthode de dilution multi-isotopique très originale utilisant le triple quadrupole icp/ms. Cette méthode génère des mesures de haute précision sur tous les éléments, majeurs et traces. Nous promouvons actuellement une base de données européenne, basée sur des signatures multi-isotopiques de haute précision. Il permet désormais une très grande précision et des origines géographiques détaillées des vins inclus dans la base de données en croissance continue. Les données sont triées et la gestion est promue via l’intelligence artificielle. L’objectif principal de la base de données dans, promu dans un projet commun entre le cnrs/uppa, ut2a (France) et la société ai dunavnet (Serbie). Les objectifs de ce projet de base de données wine in blue sont à l’usage des vignerons fournissant : signatures « terroir », localisation géographique, outils avancés de traçabilité et de lutte contre la fraude, suivi détaillé de la qualité du vin dans le temps, intégration de l’impact des changements climatiques. Nous présenterons la réalisation actuelle du projet « trace in blue », la taille de la base de données croissante, ses stratégies originales de développement et de gestion des données, et la réalisation actuelle. Nous discuterons aussi sur les opportunités originales au niveau européen a bien sur ses limites actuelles.

Auf dem weg zu einer europäischen datengrundlage basierend auf hochentwickelten multi-isotopen-signaturen und künstlicher intelligenz: das wine in blue-projekt

Haupt- und spurenelemente sind für die entwicklung der für den wein verwendeten trauben unerlässlich. Sie stammen hauptsächlich aus dem boden. Einige elemente werden auch selten während der weinherstellung hinzugefügt. Daher ist das größte spektrum an haupt-, spuren- und ultra-spurenelementen im endprodukt eine gute signatur seiner geografischen herkunft. Im rahmen des europäischen tracewindu haben wir eine sehr originelle multi-isotopische verdünnungsmethode mit triple quadrupol icp/ms entwickelt. Diese methode erzeugt hochpräzise messungen an allen elementen, haupt- und leiterbahnen. Derzeit fördern wir eine europäische datengrundlage, die auf hochpräzisen multi-isotopen-signaturen basiert. Es ermöglicht nun eine sehr hohe präzision und detaillierte geografische herkunft der in der datenbasis enthaltenen weine in kontinuierlichem wachstum. Die daten werden sortiert und die verwaltung über künstliche intelligenz gefördert. Das hauptziel der datengrundlage in , gefördert in einem gemeinsamen projekt zwischen cnrs/uppa, ut2a (frankreich) und der ki-gesellschaft dunavnet (serbien). Die ziele dieses datengrundlage-projekts wein in blau sind für den einsatz der winzer, die “terroir” -signaturen, geografische lokalisierung, fortschrittliche werkzeuge für die rückverfolgbarkeit und die bekämpfung von betrug, detaillierte weinqualitätsüberwachung im laufe der zeit, integration der auswirkungen des klimawandels. Wir werden die aktuelle leistung des projekts “trace in blue”, die größe der wachsenden datenbasis, die ursprünglichen entwicklungs- und datenmanagementstrategien und die aktuelle leistung vorstellen. Wir werden auch über die ursprünglichen möglichkeiten auf europäischer ebene diskutieren, die über ihre derzeitigen grenzen gut verfügen.

Ceramic imprint in wine: influence of hydraulic ratio on ceramic dissolution and wine pH in amphorae systems

This interaction is primarily due to an acidic attack on the ceramic by the wine. It results in (1) the dissolution of the ceramic into the wine and the release of a wide variety of elements; and (2) an increase of the wine pH. The extent of these effects depends on the mineralogical and chemical composition of the ceramic, as well as the hydraulic ratio of the ceramic-wine system (the term hydraulic ratio (ρ) defines here the volume of wine over the surface area of the ceramic in contact with the wine).

Moderate wine consumption as part of a Mediterranean diet and lifestyle under debate

Moderate wine consumption – with the meals – represents one of the beneficial components of the traditional mediterranean diet (med diet) and a positive item in the med diet score [1,2, 3]. The med diet is considered one of the best diets in the world and the world health organisation (who) identified this eating pattern as an effective strategy to prevent non-communicable diseases (ncd), since it is associated with lower disease occurrence and all-cause mortality [4] . Numerous well-conducted epidemiological studies have also reported that light-to-moderate intake of wine/alcoholic beverages is not only related to a reduced risk of cardiovascular disease, but also to all-cause mortality.

Wineries can increase their economic and environmental sustainability by optimizing the winemaking procedures, from harvest to wine maturation and conservation. Based on analytical data of the chemical composition and wine sensory evaluation, the enologist makes his own decision regarding the enological interventions at the harvest date selection, winemaking and post-winemaking.
