Shades of shading: chemical and sensory evaluation of riesling grown under various shading techniques

Abstract

AIM: Sun exposure is needed for balanced grape ripening and sugar accumulation but is also one of the main drivers for a premature Riesling ageing. The aim of this study was to evaluate the modulation of both intensity and quality of light in the vineyard on key Riesling grape and wine parameters as an adaptation strategy to changing climate. Of particular interest was the kerosene aroma caused by the C13‑norisoprenoid TDN and other compounds associated with light-induced grape compositional changes.

METHODS: Over two vintages shade cloth of three different colours was applied to Riesling vines at bunch zone in South Australia. Light measurements and incident light wavelength assessments were performed during grape ripening, and subsequent grapes and wine were analysed for key bound and free aroma compounds. After 1-year of storage, wines were analysed by Quantitative Descriptive Analysis to quantify the holistic changes of light modulation to the sensory profile.

RESULTS: Depending on colour, shade cloth was successful in modulating either the quantity and/or wavelength of light, as well as showed different response of sugar accumulation. Shading reduced TDN concentrations and kerosene aroma in wines, with very little effect on other sensory descriptors. Interestingly, while presumed C13-norisoprenoid precursor profiles were altered between shading treatments, no significant differences were observed in resulting TDN levels. 

CONCLUSIONS

This study highlights the importance of light intensity over examined light wavelength in the vineyard to manipulate TDN. Additionally, light conditions differently affected maturity with possible implications for harvest timing and climate-induced vintage compression.

Mapping of canopy features in commercial vineyards using machine vision

Vineyard canopy features such canopy porosity and fruit exposure influenced microclimate, fungal disease incidence and grape composition. An objective, rapid and non-invasive method to assess and map the canopy status is needed to apply in precision viticulture. A new method for canopy status assessment and mapping based on non-invasive machine vision was applied in commercial vineyards in this work.

Tracking the origin of Tempranillo Tinto through whole genome resequencing and high-throughput genotyping  

Grapevine cultivars are vegetatively propagated to maintain their varietal characteristics. This process of multiplication leads to spontaneous somatic mutations that can eventually generate a variant phenotype, of potential interest for cultivar improvement and innovation. However, regardless their phenotypic effect, somatic mutations stack in the genome, and they can be used to reveal the origin and dissemination history of ancient cultivars. Here, a stringent somatic variant calling over whole genome resequencing data from 35 ‘Tempranillo Tinto’ clones or old vines from seven Iberian winemaking regions revealed 135 single nucleotide variations (SNVs) shared by some of the clonal lines.

Technological possibilities of grape marc cell walls as wine fining agent. Effect on wine phenolic composition

Fining is a technique that is used to remove unwanted wine components that affect clarification, astringency, color, bitterness, and aroma. Fining involves the addition of adsorptive or reactive material in order to reduce or eliminate the presence of certain less desirable wine components and to ensure that a wine remains in a particular stable state for a given period of time Recently concerns have been raised about the addition of animal proteins, such as gelatin, to wine due to the disease known as bovine spongiform encephalopathy (Mad Cow disease). Although the origin of gelatins has been moved to porcine, winemakers are asking for substitute products with properties and application protocols similar to the traditional animal-derived ones, making the use of plant-derived proteins in fining a practically viable possibility. As a consequence, various fining agents derived from plants have been proposed, including proteins from cereals, legumes, and potato.
