Abstract

[English version below]

A vineyard zoning method is proposed from climatic, soil and geomorphologycal data, in an area of 3700 ha in Penedes (Spain) in order to optimise wine production in the study area.
Results are shown in 1:25000 maps for 5 rootstock and 7 wine grape cultivars with three wine styles: cuvé for Cava wines, white wine and red wine. Maps show 4 degrees of suitability: very advisable, advisable, usable and not advisable. Main factors for rootstock adaptation are soil water holding capacity and drainage, whereas for cultivar adaptation also altitude and geomorphology also plays a important role.

Changes in wine secondary metabolites composition by the timing of inoculation with lactic acid bacteria: impact on wine aroma

For the first time, it was established that the timing of inoculation with LAB could significantly impact the concentration of many secondary metabolites leading to significant aromatic changes. From studied compounds, the most influenced were esters and diacetyl.

METHYL SALICYLATE, A COMPOUND INVOLVED IN BORDEAUX RED WINES PRODUCED WITHOUT SULFITES ADDITION

Sulfur dioxide (SO₂) is the most commonly used additive during winemaking to protect wine from oxidation and from microorganisms. Thus, since the 18th century, SO₂ was almost systematically present in wines. Recently, wines produced without any addition of SO₂ during all the winemaking process including bottling became more and more popular for consumers. A recent study dedicated to sensory characterization of Bordeaux red wines produced without added SO₂, revealed that such wines were perceived differently from similar wines produced with using SO₂ and were characterized by specific fruity aromas and coolness1,2.

Drought tolerance assessment and differentiation of grapevine cultivars using physiological metrics: insights from field studies

This study aimed to validate a protocol and compare metrics for evaluating drought tolerance in two Vitis vinifera grapevine cultivars under field conditions. Various metrics were calculated to represent the physiological responses of plants to progressive water deficit. Data were collected from Sauvignon Blanc and Chardonnay plants subjected to three irrigation levels during the 2022-2023 season, along with data from three previous seasons. Hydro-escape areas were used to assess the plant’s ability to reduce water potential with decreasing soil water availability.

Characterization of vineyard sites for quality wine production using meteorological, soil chemical and physical data

The quality of grapevines measured by yield and must density in the northern part of Europe -conditions can be characterized as a type of “cool climate” – vary strongly from year to year and from one production site to another, i.e. différences in must densities can range from 30 to 50 °Oe. An explanation may be changes of weather conditions during critical developmental stages of the grapevines (2, 3, 5). These can be categorized as “macro climatic” influences.

Landscapes of the wine: the four seasons of herault
