Évaluation environnementale de pratiques vitivinicoles innovantes

Résumé

L’Institut Français de la Vigne et du Vin (IFV) conduit de nombreux projets d’évaluation technico-économiques de pratiques vitivinicoles innovantes, en expansion dans les entreprises du secteur, ou encore au stade de R&D chez les agrofournisseurs. La méthode de l’Analyse de Cycle de Vie (ACV) permet d’évaluer la pertinence environnementale de ces nouvelles pratiques, c’est-à-dire qu’à minima, les changements de pratiques n’augmentent pas les impacts environnementaux des itinéraires techniques. Le Pôle Evaluation environnementale de l’IFV a ainsi évalué des alternatives aux herbicides et des pratiques d’adaptation au changement climatique. Il en ressort des pratiques présentant un gain environnemental (implantation de couverts végétaux dans l’inter-rang non exportés), tandis que d’autres pratiques, telles que modélisées à ce jour, dégradent l’empreinte environnementale du vin (désherbages mécanique et électrique, phytoextraction du cuivre des sols, irrigation, désucrage des vins). La pertinence environnementale de l’utilisation de filets antigrêle dépend quant à elle de plusieurs hypothèses testées dans une analyse de sensibilité. Ce cumul de références permet d’orienter les professionnels de la filière dans leurs choix technico-économiques. Il faut cependant prendre ces résultats comme des premières références, et encourager les évaluations avec des données spécifiques. Le projet de rendre possible le calcul d’empreinte carbone spécifiques pour ces pratiques dans l’outil de diagnostic carbone simplifié GES&Vit va dans ce sens.

Environmental assessment of innovative winegrowing practices

The French Institute for Vine and Wine (IFV) carries out numerous projects of technical and economical assessment on viticultural and oenological practices, either already implemented by vinegrowers or still at a R&D stage. The Life Cycle Assessment (LCA) is a method that is useful to assess the environmental relevance of those emerging practices, checking that at least practices changes does not increase the environmental footprint of technical itineraries. Thus, the IFV’s Environmental Assessment team has assessed alternatives to herbicides and adaptation to climate change practices. Some practices show an environmental benefit (non exported inter-rows grass cover) while other practices show a worse environmental footprint, as it is modelled so far (mechanical and electrical weeding, copper phytoextraction from soils, irrigation, wine desugaring). The environmental relevance of hail protection net implementation depends on several hypothesis that have been challenged in a sensibility analysis. Those references contribute to help wine professional in decision-making, but have to be considered as first results. Assessments with specific data has to be encouraged: the project of making the carbon footprint calculation of those practices possible in the tool GES&Vit goes in that way.

Evaluación ambiental de prácticas vitícolas innovadoras

El Institut Français de la Vigne et du Vin (IFV) está llevando a cabo un gran número de experimentos sobre prácticas vitícolas innovadoras, que están empezando a aparecer en las empresas del sector, o que aún se encuentran en fase de I+D con proveedores agrícolas. Estas prácticas pueden tener por objeto reducir el impacto medioambiental, adaptar los viñedos al cambio climático u otros objetivos técnicos, económicos o sociales. Sea cual sea el objetivo, es necesario comprobar la pertinencia de estas nuevas prácticas y, en particular, su pertinencia medioambiental, es decir, que, como mínimo, los cambios de prácticas no aumenten el impacto medioambiental de los itinerarios técnicos. Así pues, en los últimos años, la unidad de evaluación medioambiental del IFV ha llevado a cabo evaluaciones medioambientales de una serie de prácticas observadas en las empresas vitivinícolas o ensayadas por los ingenieros vitícolas y enólogos del IFV. El método de evaluación del impacto medioambiental utilizado es el del análisis del ciclo de vida (acv), que es actualmente el más reconocido por ser el más completo: es un método multietapa (todas las etapas del ciclo de vida de un producto o servicio) y multicriterio (una quincena de indicadores de impacto, entre ellos la huella de carbono, la huella hídrica y la ecotoxicidad del agua dulce). Garantiza que una nueva práctica no provoque un desplazamiento de la contaminación entre etapas del ciclo de vida o entre categorías de impacto. Las prácticas evaluadas hasta la fecha por el IFV son en gran medida prácticas de control de las malas hierbas. En primer lugar, un proyecto tenía por objeto comparar los distintos tipos de mantenimiento del suelo observados en 24 explotaciones de borgoña: desherbado químico o mecánico bajo la hilera, desherbado químico, desherbado mecánico, pasto permanente o temporal del entresurco. El cálculo del acv de los itinerarios técnicos completos también permitió poner en perspectiva la variación de impacto calculada entre estas prácticas, con los impactos totales de los itinerarios técnicos. Esta comparación de las prácticas actuales de mantenimiento del suelo se completó con experimentos del IFV: también se evaluaron la tracción animal, el desherbado eléctrico y el desherbado con ácido pelargónico. Otros proyectos de experimentación del IFV también han sido objeto de evaluaciones medioambientales, sobre prácticas de fitorremediación de la contaminación del suelo por cobre mediante cubiertas vegetales, y sobre prácticas de adaptación al cambio climático (redes antigranizo, irrigación y desalcoholización parcial de los vinos). Algunos estudios han puesto de manifiesto la importancia de realizar análisis de sensibilidad sobre determinados parámetros: por ejemplo, la reducción de la huella de carbono lograda por las redes, cuando se expresa por litro de vino, depende de la frecuencia de las pérdidas de cosechas debidas al granizo. Además, el aumento de la huella de carbono generado por la desalcoholización parcial se debe en gran medida al volumen perdido a través de los procesos estudiados, y podría evitarse si se encontraran formas de reciclar estos subproductos. Paralelamente a la evaluación medioambiental de las prácticas innovadoras, el IFV sigue desarrollando su herramienta GES&Vit para la evaluación simplificada de la huella de carbono de las explotaciones vitícolas. Los estudios de evaluación por prácticas vitícolas pretenden enriquecer esta herramienta de cálculo para permitir la evaluación de itinerarios técnicos innovadores por parte de quienes trabajan sobre el terreno.

Ceramic imprint in wine: influence of hydraulic ratio on ceramic dissolution and wine pH in amphorae systems

This interaction is primarily due to an acidic attack on the ceramic by the wine. It results in (1) the dissolution of the ceramic into the wine and the release of a wide variety of elements; and (2) an increase of the wine pH. The extent of these effects depends on the mineralogical and chemical composition of the ceramic, as well as the hydraulic ratio of the ceramic-wine system (the term hydraulic ratio (ρ) defines here the volume of wine over the surface area of the ceramic in contact with the wine).

Quantitative and qualitative changes in terpenes during enzymatic maceration and fermentation in wine production: insights from Polish grape varieties

The production of fermented alcoholic beverages involves numerous processes in which microorganisms and enzymes convert components derived from the raw material into a wide range of compounds that affect the sensory characteristics of the resulting product. It is estimated that there may be as many as 800 to 1,000 such compounds in wine. These compounds belong to different chemical groups such as esters, alcohols, carboxylic acids, carbonyl compounds, polyphenols, sugars and many others.

Viticulture is exposed to a range of new stressors, that are challenging its sustainability and disrupting famous and well-established production regions. Development of a standardized method for metabolite analysis by NMR to assess wine authenticity

The wine sector generates a considerable amount of wealth but is facing a growing problem of fraud. Wine counterfeiting is one of the oldest and most common cases of food fraud worldwide. Therefore, the authenticity and traceability of wine are major concerns for both the industry and consumers. To address these issues, robust and reliable analysis and control methods are necessary. Several methods have been developed, ranging from simple organoleptic tests to more advanced methodologies such as isotopic techniques or residual radioactivity measurements.

Yeasts protein extracts: new low impact tool for wine protein stability

Yeast protein extracts (ypes) have flocculating properties, allowing clarification of musts and wines. They are already authorized by oiv for fining purposes with a maximum dosage limit of 60 g/hl for red wines, and 30 g/hl for musts, white and rosè wines. The extraction of ypes from the cytoplasm of yeasts (saccharomyces spp) cells is defined by the resolution oiv oeno 452-2012, that indicate also some specification of the final product.
