Innovative approaches in the evaluation of the spatial and temporal biodiversity of grape varieties from the Portuguese Bairrada appellation using LIMM-PCA: a study across five harvests

Abstract

Sustainable viticulture and winemaking continue to represent huge challenges, where a better knowledge about the functional role of biodiversity in the vineyard and wine ecosystems is required, as well as the varieties plasticity. Particular attention should be devoted to the spatial and temporal interactions between authorized or recommended varieties for a specific demarcated region and clime and vineyard conditions (such as soil type, orientation of the lines, age of the vine, density of planting, harvesting practices, among others). Taking advantages of chemometric tools, this research aims to provide advances to examine interactions between climatic conditions, vineyard ecosystem and physicochemical data from a set of varieties cultivated in bairrada appellation (Portugal). Five varieties (Arinto, Cercial, Bical, Maria Gomes, And Baga Vitis vinifera L.) Were selected as case study. For each variety, grapes from two ecosystems were collected during five consecutive harvests (2017 to 2021). For each variety and vineyard, physical-chemical data from grapes (titratable acidity, pH and sugar content), used to estimate the technological maturity state, and free and glycosidically potential aroma compounds were determined. Combination of ANOVA simultaneous component analysis ASCA+ with linear mixed models (LiMM-PCA) was applied to analyze effect of three factors, harvest, grape variety and vineyard on the physical-chemical parameters and free and glycosidically potential aroma compounds of the grapes. LIMM-PCA allowed to analyze multivariate data set with underlying design, which included both fixed (harvest and cultivar) and random (vineyard) factors. The vineyards selected for sampling were representative of the bairrada appellation. Thus, considering vineyard as a random factor permitted to draw conclusions about Bairrada region as a whole. In addition, the approach used allowed to hierarchize the weight of the different variables and to estimate the adaptability of each of the five varieties, which represents a high-value tool in supporting vineyard and wine production management, toward current climate challenges.

Approches innovantes en évaluation de la biodiversité spatiale et temporelle des cépages de l’appellation portugaise Bairrada à l’aide de LIMM-PCA : une étude sur cinq vendanges

La viabilité de la viticulture et la vinification continuent de représenter d’énormes défis, où une meilleure connaissance du rôle fonctionnel de la biodiversité dans les écosystèmes vitivinicoles est nécessaire, ainsi que de la plasticité des cépages. Une attention particulière devrait être accordée aux interactions spatiales et temporelles entre les variétés autorisées ou recommandées pour une appellation spécifique et les conditions climatiques et viticoles (telles que le type de sol, l’orientation des lignes, l’âge de la vigne, la densité de plantation, les pratiques de récolte, entre autres). Tirant parti des méthodes d’analyse statistique multivariée, cette recherche vise à apporter des avancées dans l’examen des interactions entre les conditions climatiques, l’écosystème du vignoble et les données physicochimiques d’un ensemble de variétés cultivées dans l’appellation Bairrada (Portugal). Cinq variétés (Arinto, Cercial, Bical, Maria Gomes Et Baga Vitis Vinifera L.) Ont été sélectionnées comme étude de cas. Pour chaque cépage, des raisins issus de deux écosystèmes ont été récoltés lors de cinq année consécutives (2017 à 2021). Pour chaque cépage et vignoble, les données physico-chimiques du raisin (acidité titrable, ph et teneur en sucre), utilisées pour estimer l’état de maturité technologique, ainsi que les composés aromatiques libres et à potentiel glycosidique ont été déterminés. La combinaison de l’analyse en composantes simultanées ANOVA ASCA+ avec des modèles mixtes linéaires (LIMM-PCA) a été appliquée pour analyser l’effet de trois facteurs, la récolte, le cépage et le vignoble, sur les paramètres physico-chimiques et les composés aromatiques libres et potentiels glycosidiques des raisins. LIMM-PCA a permis d’analyser un ensemble de données multivariées avec une conception sous-jacente, qui comprenait à la fois des facteurs fixes (récolte et cultivar) et aléatoires (vignoble). Les vignobles sélectionnés pour l’échantillonnage étaient représentatifs de l’appellation Bairrada. Ainsi, considérer le vignoble comme un facteur aléatoire a permis de tirer des conclusions sur la région de Bairrada dans son ensemble. De plus, l’approche utilisée a permis de hiérarchiser le poids des différentes variables et d’estimer l’adaptabilité de chacune des cinq variétés, ce qui représente un outil de grande valeur pour accompagner la gestion du vignoble et de la production vitivinicole, face aux défis climatiques actuels.

Enfoques innovadores en la evaluación de la biodiversidad espacial y temporal de variedades de uva de la denominación de origen portuguesa Bairrada mediante limm-pca: un estudio en cinco cosechas

La viticultura y la vinificación sostenibles siguen representando grandes retos, donde se requiere un mejor conocimiento sobre el papel funcional de la biodiversidad en los ecosistemas del viñedo y del vino, así como de la plasticidad de las variedades. Se debe prestar especial atención a las interacciones espaciales y temporales entre las variedades autorizadas o recomendadas para una región demarcada específica y las condiciones climáticas y de viñedo (como el tipo de suelo, la orientación de las líneas, la edad de la vid, la densidad de plantación, las prácticas de cosecha, entre otras). Otros). Aprovechando las herramientas quimiométricas, esta investigación pretende aportar avances para examinar las interacciones entre las condiciones climáticas, el ecosistema del viñedo y los datos fisicoquímicos de un conjunto de variedades cultivadas en la denominación de origen bairrada (portugal). Se seleccionaron como caso de estudio cinco variedades (Arinto, Cercial, Bical, Maria Gomes Y Baga Vitis vinifera L.). Para cada variedad se recolectaron uvas de dos ecosistemas durante cinco cosechas consecutivas (2017 a 2021). Para cada variedad y viñedo se determinaron datos fisicoquímicos de la uva (acidez titulable, ph y contenido de azúcar), utilizados para estimar el estado de madurez tecnológica, y compuestos aromáticos libres y glicosídicamente potenciales. Se aplicó una combinación del análisis de componentes simultáneo anova ASCA+ con modelos lineales mixtos (LIMM-PCA) para analizar el efecto de tres factores, cosecha, variedad de uva y viñedo, sobre los parámetros fisicoquímicos y los compuestos aromáticos libres y glicosídicamente potenciales de las uvas. Limm-pca permitió analizar un conjunto de datos multivariados con un diseño subyacente, que incluía factores fijos (cosecha y cultivar) y aleatorios (viñedo). Los viñedos seleccionados para el muestreo fueron representativos de la denominación de origen Bairrada. Así, considerar el viñedo como un factor aleatorio permitió sacar conclusiones sobre la región de bairrada en su conjunto. Además, el enfoque utilizado permitió jerarquizar el peso de las diferentes variables y estimar la adaptabilidad de cada una de las cinco variedades, lo que representa una herramienta de alto valor para apoyar la gestión de la producción de viñedos y vinos, frente a los desafíos climáticos actuales.

Arbuscular mycorrhizal fungi as biomarkers of vineyard yield in Champagne

The vine is colonized by a multitude of micro-organisms (fungi, bacteria, oomycetes) mainly coming from the microbial reservoir constituted by the soil. Kokumi is a complex sensation perceived as enhanced palatability. Under the influence of kokumi substances, foods/beverages tastes become more flavorful with increased intensity, spread, continuity, richness, harmony, and punch which are the six related characteristics corresponding to the kokumi sensory concept (Yamamoto & Inui-Yamamoto 2023).

Effect of different plant fibers on the elimination of undesirable compounds in red wine 

The presence of undesirable compounds in wines, such as ota, biogenic amines and pesticides residues, affects wine quality and can cause health problems for the consumer. Additionally, an excess of tannins can produce an undesirable increase in the astringency and bitterness of the wine, so tannins are also a target for reduction. The main tool that a winemaker has to reduce their content in the wine is fining. However, some of the fining agents commonly used in the winery can cause allergies or even increase the protein content in the wine, increasing the turbidity.

New oenological technology for adaptation to climate change: reduction of alcohol content during wine fermentation through stripping, with fermentative CO2

The capture and valorization of fermentative CO2 have been developed for several years by the company w platform for internal uses, notably in the cellars: inerting, cooling, reduction of water consumption, extraction, with aroma valorization. In a context of climatic warming during the vegetative cycle, grapes are currently harvested with a significant sugar concentration, a phenomenon that is expected to intensify in the coming decades. The high alcohol content of the resulting wines goes against the demand of customers who are seeking high-quality wines with less alcohol.
