Publication of the 3rd edition of the OIV ampelographic descriptors

Abstract

The description of varieties and species of Vitis has long been the subject of studies by specialists for a long time, who have led the OIV to publish in 1983 the “Code of descriptive characteristics of the varieties and species of Vitis”. In 2016, the OIV started a new process of revision, which allowed to (i) confirm 70 pre-existent descriptors; (ii) modify 79 pre-existent descriptors; (iii) and establish 27 new descriptors. The amendments have mainly concerned the reference varieties, the levels of expression and the definitions of the modified descriptors. The new descriptors are related to morphologic characteristics, to the resistance to biotic and abiotic factors, and to further SSR markers useful for grapevine identification. The revision process is completed by updating the introduction of the previous edition and by approving three new annexes. Furthermore, a new format is applied to the 176 ampelographic descriptors, by including Russian language among the other OIV official languages, and by replacing old drawings with modern illustrations. Finally, the launch of the new “Ampelographic descriptor database” on the OIV website, enhance the free access to the descriptors and their implementation by the OIV ampelographers.

Sustainable wine industry: supercritical fluid extraction as key technology for biorefinery enhancement

Supercritical carbon dioxide (sc-CO2) extraction is an environmentally friendly technology employed for bioactive compounds recovery from various natural sources and biomasses. The advantages of sc-co2 extraction include its selectivity, relatively mild operating conditions, which minimize the degradation of sensitive compounds, and the absence of potentially harmful organic solvents.

To characterize a wine, the most frequently used criteria describe its color, its origin, the grape varieties from which they come, or even for white wines its residual sugar content (dry, semi-dry, sweet). In france, the system of appellations of origin set up in 1919 was initially based solely on the notoriety and origin of the wines. But given the unfavorable consequences that this lack of details generated, the public authorities quickly integrated in 1927 into the “capus” law criteria for access to designations of origin, relating to the specific characteristics of the soils of the vineyards and the grape varieties used, in particular exclusion of interspecific hybrid varieties. In 1935 the creation of the aoc system confirmed the interest in precisely defining all the production conditions that must be implemented to be able to claim the benefit of an aoc, and grape varieties were an essential condition for acquisition.

At a time when the world’s winegrowing industry is having to adapt to a number of challenges, winegrowers are wondering about the consequent changes they will have to make (grape varieties, changes in vineyard and cellar techniques). For winegrowers and consumers alike, there is also the question of how these changes will affect the taste of their wines. This research, based on the study of numerous sources and archives from the 20th century, some of which have never been published before, aims to show that, in the recent past, the winegrowing world has shown incredible resilience in the face of crises, and that the taste and perception of fine wines has changed considerably in 100 years.

An online training tool for wine professionals around the world: from responsible service to a sustainable consumption of wine

Most consumers enjoy wine in moderation, however, there remains a minority that may develop risky drinking habits, potentially harming themselves and those around them. For the last fifteen years, a prime objective of the wine in moderation programme has been to educate and empower the wine sector and now for the first time, a central education tool has been developed, integrating the topic of moderate consumption horizontally in all wine activities. The entire wine value chain – from the producer to the salesperson to the restaurant service staff – can contribute to reduce harmful consumption and encourage responsible drinking patterns.

Is complex nutrition more advantageous than mineral nitrogen for the fermentative capacities of S. cerevisiae?

During alcoholic fermentation, nitrogen is an essential nutrient for yeast as it plays a key role in sugar transport and biosynthesis of wine aromatic compounds (thiols, esters, higher alcohols). The main issue of a lack in yeast assimilable nitrogen (yan) in winemaking is sluggish or stuck fermentations promoting the growth of alteration species which may lead to economic losses. However, correcting this nitrogen deficiency is sometimes not enough to restore proper fermentation performance. This suggests the existence of other nutritional shortages.
