Proposal of a procedure for sensory characterisation of wines from different subareas of a same D.O.C. (V.Q.P.R.D.)

Abstract

In the course of the present work, which is the first part of a study on the “characterization of Barbera dell’Oltrepo Pavese D.O.C.” 30 wines Barbera from 1993 vintage have been compared only regarding their sensory characteristics. An unstructured scale card, composed by 15 descriptors have been used. The terms of description in the card have been those more frequently mentioned by the assessors during some preliminary degustation sessions. All data from sensory evaluation have been elaborated by some consensus statistical methods (Univariate regression, Generalized Procrustes analysis, Consensus PLS) to eliminate systematic differences between judges, consequence of personal scale and/or confusion between attributes. The differences among samples are only slightly changed when the consensus techniques have been used. With the exception of some wines, a good uniformity in sensory characteristics was observed. Relations between wine sensory descriptors and the altitude of the vineyards have been also studied using PLS method.

Influence of coinoculation of L. plantarum and O. oeni on the color and composition of Tempranillo wines

AIM: The aim of this research was to determine the influence of performing malolactic fermentation (MLF) of Tempranillo wines by coinoculation with Lactobacillus plantarum or Oenococcus oeni and Saccharomycescerevisiae on the composition and color of the final wines in comparison with sequential inoculation with Oenococcus oeni and spontaneous MLF. METHODS: Around 1500 Kg of Tempranillo grapes from Pagos de Anguix winery (Anguix, AOC Ribera de Duero, Spain) were harvested at the optimal maturity

Managing Grapevine Powdery Mildew with Ultraviolet-C Light in Washington State

Germicidal ultraviolet-C (UV-C) light has shown promising results for suppression of several plant-pathogenic microorganims, including Erysiphe necator, which attacks grapevine. In Washington State the majority of winegrape production is in a semi-arid steppe environment, with historically low powdery mildew disease pressure, making it a promising area to deploy UV-C as a disease management tool. Trials focusing on UVC application timing and frequency will assist in developing regionally-appropriate application recommendations for eastern Washington State.

Metabolomic profiling of heat-stressed grape berries

The projected rise in mean air temperatures together with the frequency, intensity, and length of heat waves in many wine-growing regions worldwide will deeply impact grape berry development and quality. Several studies have been conducted and a large set of molecular data was produced to better understand the impact of high temperatures on grape berry development and metabolism[1]. According to these data, it is highly likely that the metabolomic dynamics could be strongly modulated by heat stress (HS).
