High power ultrasound has been recently recognized one of the most promising technologies in winemaking processes, especially after the recent OIV resolution, concerning the application of ultrasounds on crushed grapes to promote the extraction of skin compounds.

The Ibero-American Network of Viticulture, a component of the program of agricultural technology of the CYTED (Ibero-American Program of Science and Technology for Development), is developing the project “Zoning Methodology and Application in Viticultural Regions of Ibero-America”.

Occurrence of freezing temperatures in early spring when grapevine shoots are developing is termed late frost in viticulture. Young green tissues are very sensible to temperatures below zero and damages often lead to important yield and quality losses such as the case in Europe in 2017. An indirect method to avoid late frost damage in vineyards consist in delaying the budburst. Previous research reported similar effects by applying vegetal oil on dormant buds. Here, we tested the application of rapeseed vegetal oil during late winter to delay the budburst on two V.vinifera cultivars of interest in Austria, Grüner Veltliner (GV) and Zweigelt (ZW).

It is well-known that there is a relationship between the “terroir” and the characteristics of grapes and quality of wines. However, adequate grape variety and other cultural factors should be also taken into account

During wine production process high attention to the microbiological control from fermentation of the grape must to bottling is necessary. In fact, control of the indigenous microflora of the grape ensures correct fermentation activity of the inoculated starter, while control of the microorganisms in the finished wine is essential to prevent wine spoilage and to ensure the dominance of the desired bacteria when malolactic fermentation is required (Mas and Portillo, 2022).
