L’Appellation d’Origine Contrôlée « Huile Essentielle de Lavande de Haute Provence »

Abstract

Depuis des siècles, la lavande est utilisée pour son parfum et pour ses vertus thérapeutiques naturelles.
La cueillette de la lavande sauvage s’est développée à grande échelle dans les montagnes calcaires de la Provence à la fin du 19e siècle. L’écoulement de la production s’effectuait presque exclusivement vers la ville de Grasse, cité des parfumeurs.
Progressivement, la culture s’est substituée à la cueillette dans les années 1930.

Effects of a new vacuum evaporation method on chemical and sensory properties of must and wine

A new process for vacuum evaporation was developed where evaporation takes place near the inner surface of a vortex produced by a rotor submerged in the liquid. Contrary to the state of the art the Vortex rotor process does not need a vacuum vessel but the rotating liquid creates a geometrically stable low pressure void surrounded by a vortex stabilized by the equilibrium between centrifugal forces and the pressure difference. First tests with water and sugar solutions at concentrations similar to grape must were conducted to verify the theoretical predictions, test the performance under different conditions and study the effect of various process parameters (Rösti et al 2015).

Unravelling Saccharomyces cerevisiae biosynthethic pathways of melatonin, serotonin and hydroxytyrosol  by UPLC-HRMS Isotopic labelling analysis

The main objective is to unravel the yeast biosynthetic pathways for MEL, SER and HT by using the respective labelled amino acids precursors: 15N2-L tryptophan and 13C-tyrosine.
The alcoholic fermentation experiments are performed with two different commercial
S cereviseae yeasts using synthetic must with the addition of the labelled compounds and the bioactive compounds were followed during the fermentation process. Six biological replicates of the fermentations were considered. MEL, SER and HT were analysed by UHPLC coupled to High Resolution Mass Spectrometry (HRMS). Accurate mass determination allowed to unequivocally distinguishing labelled and unlabelled compounds.
