New oenological criteria for selecting strains of Lachancea thermotolerans for wine technology

Abstract

The study conducted various fermentations of different grape juices using various strains of Lachancea thermotolerans and one strain of Saccharomyces cerevisiae. Because of the new conditions caused by climate change, wine acidity must be influenced as well as the volatile profile. Non-Saccharomyces yeasts such as L. thermotolerans are real options to mitigate the impact of climate change in wine production. The L. thermotoleransstrains comprised several strains available commercially and several natural isolates related to wine. L. thermotolerans showed significant statistical differences in basic chemical parameters such as lactic acid, malic acid, succinic acid, acetic acid, glycerol, higher alcohols, esters, fatty acids or ethanol levels as well as in the volatile profile. S. cerevisiae clearly produced some volatile compounds in higher amounts than the studied L. thermotolerans strains while others showed the opposite effect.

Effect of biological control agents on grapevine rhizosphere microbiome and grapevine defenses

Plant diseases are a major obstacle to crop production. The main approaches to battle plant diseases, consist of synthetic chemicals to attack infecting pathogens. However, concerns are increasing about the effects of chemicals in the environment, leading to an increase in the use of biocontrol agents (BCAs), due to their assets, such as, antagonism, and competition. In this study, we tested the hypothesis that the introduction of Bacillus subtilis PTA-271 (Bs PTA-271) and Trichoderma atroviride SC1 (Ta SC1) produce distinctive modifications in the composition and network structure of the grapevine rhizosphere microbial community, as well as grapevine induced defenses.

Characterization of a Sémillon clonal population: exploring genetic diversity, metabolomic profiles, and phenotypic variations

Sémillon is a cultivated grape variety known for contributing to dry and sweet white wine production. However, only seven approved clones have been officially recognized in France[1]. In this study, we aimed to characterize the genetic diversity and metabolomic profiles of a Sémillon clonal population, shedding light on the potential variations within this important grape variety.

Perception, liking and emotional response of tropical fruit aromas in Chardonnay wines

Tropical fruit aromas in wines are thought to be important to wine consumers, although there is little research to confirm this statement. With so many wine styles available, it has become important to understand the qualities that are desirable to consumers and how to achieve those qualities. Thiols and esters are compounds that have been found to cause tropical fruit aromas in chardonnay (ref). Fermentation temperature gradients and skin contact were found to increase these compounds using micro scale fermentations. This work aimed to scale up these fermentations/operations to determine if the desired tropical fruit aromas could still be achieved and if there is a perceivable difference in tropical fruit aromas, liking, and emotional response in the wines at the consumer level.

Metabolomic profiling of botrytized grape berries: unravelling the dynamic chemical transformations during noble rot

Botrytis cinerea, a fungal pathogen commonly known as grey mold, which under specific climatic conditions can develop into a desirable form known as noble rot. In this process the fungus penetrates the grape skin, allowing water evaporation and concentration of sugars and flavors, while profoundly affects the metabolite composition of grapes, leading to the production of unique and desirable compounds in the resulting wines. The result is a unique and complex wine with a luscious sweetness, heightened aromatics, and a distinct character.

Water availability at budbreak time in vineyards that are deficitary irrigated during the summer: Effect on must volatile composition


In recent years, Mediterranean regions are being affected by marked climate changes, primarily characterized by reduced precipitation, greater concurrence of temperature extremes and drought during the growing season, and increased inter-annual variability in temperatures and rainfall. Generally, high-quality red wines need moderate water deficit. Hence, irrigation may be needed to avoid severe vine water stress occurring in some vintages and soils with low holding capacity. The aim of this work was to evaluate the effects of soil recharge irrigation in pre-sprouting and summer irrigation every week (30 % ETO) from the pea size state until the end of ripening (RP) compared to exclusively summer irrigation every week (R) in the same way that RP, on must volatile composition at harvest.
