Assessment of alternative sweetening methods for dealcoholized wine

Abstract

In recent years, there has been an increase in demand for non-alcoholic wine with an ethanol content of less than 0.5% v/v. The dealcoholization process can take place by various methods, such as vacuum distillation or membrane technologies like osmotic distillation. Compared to distillation, membrane systems often require multiple passes or a combination of multiple separation methods. Complete or almost complete removal of ethanol significantly changes the sensory characteristics of wine. The influence of ethanol on the taste, aroma and stimulating properties of wine is complex and partly contradictory. Dealcoholization leads to a decrease in the sweetness of the wine and an increase in acidity, which is usually balanced by adding sugar. Due to the growing interest in wines with a high sugar content, research is aimed at finding alternative methods of sweetening non-alcoholic wines. Sensory experiments indicate different effects of different sweeteners on the aroma and taste of non-alcoholic wines. To improve the quality of non-alcoholic wine, the use of cryoconcentrate as an alternative source of sugar is considered as one of the methods. These concentrates contribute to the regulation of acidity and the enrichment of wine with useful substances, which can have a positive effect on the taste and health of consumers. It is important to emphasize that non-alcoholic wines made using these concentrates cannot be considered alcoholic products due to the absence of higher alcohol or added refined sugar. Future research should focus on confirming the safety of using cryoconcentrates and studying their effect on the content of useful substances in wines. The potential of these concentrates to improve wine quality remains a promising direction for further research. The work aims to highlight the composition of cryoconcentrates and its impact on dealcoholized wine due to targeted blending.

Évaluation des méthodes alternatives d’édulcoration du vin désalcoolisé 

Ces dernières années, on observe une augmentation de la demande pour les vins sans alcool avec une teneur en éthanol inférieure à 0,5% en volume. Le processus de déalcoolisation peut se faire par diverses méthodes, telles que la distillation sous vide ou les technologies membranaires comme la distillation osmotique. Comparées à la distillation, les systèmes membranaires nécessitent souvent plusieurs passages ou une combinaison de plusieurs méthodes de séparation. La suppression complète ou presque complète de l’éthanol modifie sensiblement les caractéristiques sensorielles du vin. L’impact de l’éthanol sur le goût, l’arôme et les propriétés stimulantes du vin est complexe et en partie contradictoire. La déalcoolisation entraîne une diminution de la douceur du vin et une augmentation de l’acidité, généralement compensée par l’ajout de sucre. En raison de l’intérêt croissant pour les vins à forte teneur en sucre, des recherches sont menées pour trouver des méthodes alternatives d’édulcoration des vins sans alcool. Des expériences sensorielles indiquent l’impact variable de différents édulcorants sur l’arôme et le goût des vins sans alcool. Une des façons d’améliorer la qualité du vin sans alcool est d’utiliser des concentrés cryo comme source alternative de sucre. Ces concentrés aident à réguler l’acidité et à enrichir le vin en substances bénéfiques, ce qui a un impact positif sur le goût et la santé des consommateurs. Il est important de souligner que les vins sans alcool fabriqués à partir de ces concentrés ne peuvent pas être considérés comme des produits alcoolisés en raison de l’absence d’alcool supérieur ou d’addition de sucre raffiné. Des recherches supplémentaires doivent être menées pour confirmer la sécurité d’utilisation des concentrés cryo et étudier leur impact sur la teneur en substances bénéfiques des vins. Le potentiel de ces concentrés pour améliorer la qualité du vin reste une direction prometteuse pour de futures recherches. Ce travail vise à mettre en lumière la composition des concentrés cryo et leur impact sur le vin déalcoolisé grâce à un assemblage ciblé.

Bewertung von alternativen süßungsmethoden für entalkoholisierten wein

In den letzten jahren ist die nachfrage nach alkoholfreiem wein mit einem ethanolgehalt von weniger als 0,5 % v/v stetig gestiegen. Der entalkoholisierungsprozess kann durch verschiedene methoden erfolgen, z. B. Durch vakuumdestillation oder membrantechnologien wie die osmotische destillation. Im vergleich zur destillation sind bei membransystemen oft mehrere durchgänge oder eine kombination mehrerer trennverfahren erforderlich. Die vollständige oder fast vollständige entfernung von ethanol verändert die sensorischen eigenschaften des weins erheblich. Der einfluss von ethanol auf den geschmack, das aroma und die anregenden eigenschaften von wein ist komplex und teilweise widersprüchlich. Die entalkoholisierung führt zu einer verringerung der süße des weins und zu einer erhöhung des säuregehalts, was in der regel durch den zusatz von zucker ausgeglichen wird. Aufgrund des wachsenden interesses an weinen mit hohem zuckergehalt zielt die forschung darauf ab, alternative methoden zum süßen von alkoholfreien weinen zu finden. Sensorische experimente zeigen unterschiedliche auswirkungen verschiedener süßungsmittel auf das aroma und den geschmack von alkoholfreien weinen. Um die qualität von alkoholfreiem wein zu verbessern, wird unter anderem die verwendung von kryokonzentrat als alternative zuckerquelle in betracht gezogen. Diese konzentrate tragen zur regulierung des säuregehalts und zur anreicherung des weins mit nützlichen substanzen bei, was sich positiv auf den geschmack und die gesundheit der verbraucher auswirken kann. Es ist wichtig zu betonen, dass alkoholfreie weine, die unter verwendung dieser konzentrate hergestellt werden, nicht als alkoholische erzeugnisse angesehen werden können, da sie keinen höheren alkoholgehalt aufweisen und keinen raffinierten zucker enthalten. Künftige forschungsarbeiten sollten sich darauf konzentrieren, die sicherheit der verwendung von kryokonzentraten zu bestätigen und ihre auswirkungen auf den gehalt an nützlichen substanzen in weinen zu untersuchen. Das potenzial dieser konzentrate zur verbesserung der weinqualität bleibt eine vielversprechende richtung für die weitere forschung. Die arbeit zielt darauf ab, die zusammensetzung von kryokonzentraten und ihre auswirkungen auf entalkoholisierten wein durch gezielten verschnitt zu beleuchten.

100 ans d’évolution des règles relatives à l’encépagement des AOC viticoles françaises : quelles perspectives face aux enjeux contemporains

To characterize a wine, the most frequently used criteria describe its color, its origin, the grape varieties from which they come, or even for white wines its residual sugar content (dry, semi-dry, sweet). In france, the system of appellations of origin set up in 1919 was initially based solely on the notoriety and origin of the wines. But given the unfavorable consequences that this lack of details generated, the public authorities quickly integrated in 1927 into the “capus” law criteria for access to designations of origin, relating to the specific characteristics of the soils of the vineyards and the grape varieties used, in particular exclusion of interspecific hybrid varieties. In 1935 the creation of the aoc system confirmed the interest in precisely defining all the production conditions that must be implemented to be able to claim the benefit of an aoc, and grape varieties were an essential condition for acquisition.

Agri-photovoltaics: first experience above Riesling vines

There are already a number of systems in operation around the world with various crops and under a wide range of different set-ups.
