Estudio comparativo del potencial enológico de dos varietales tintos cultivados en la isla de Tenerife

Abstract

En el presente trabajo se ha realizado un estudio comparativo entre los varietales tintos Listán negro y Negramolle en la Denominación de Origen Tacoronte-Acentejo. Se han determinado durante dos años, los parámetros clásicos de maduración, el contenido en fenoles, los antocianos y los antocianos extraibles. Así mismo, se llevaron a cabo vinificaciones experimentales con dichos cultivares en orden a determinar no solo el potencial sino también su aptitud enológica. Del análisis de los resultados obtenidos sobre las uvas en maduración, se desprenden unos valores más adecuados de pH y contenido en potasio en la variedad Negramolle frente a la Listán negra, y un contenido en materia colorante potencialmente inferior en la variedad Negramoll. Sin embargo, estudiando la evolución frente al tiempo de los vinos elaborados, el contenido en antocianos y fenoles totales decae más rápidamente en la variedad Listán negra, manteniéndose más estable la variedad Negramolle.

BIOPROTECTION BY ADDING NON-SACCHAROMYCES YEASTS : ADVANCED RESEARCH ON THIS PROMISING ALTERNATIVE TO SO₂

Sulphur dioxide has been used for many years for its antimicrobial, antioxidant and antioxydasic properties in winemaking but nowadays, it is a source of controversy. Indeed, consumers are more attentive to the naturalness of their foods and beverages and the legislation is changing to reduce the total SO₂ levels allowed in wines. To limit and replace the doses of sulphur dioxide applied, winemakers can now use bioprotection consisting in live yeast addition as alternative,seems to be promising. This process, lightly used in from the food industry, allows to colonize the environment and limit the development or even eliminate undesirable microorganisms without altering the sensory properties of the product.

Variety “Rebula” (Vitis vinifera L.) determines the terroir Goriška brda “Collio” in Slovenia

A «terroir» is a group of vineyards from the same region, belonging to a specific appellation, and sharing the same type of soil, weather conditions, grapes and wine making savoir-faire, which contribute its specific personality to the wine. White wine variety «Rebula» or «Ribolla gialla» is a local and traditional variety, which is mentioned already in XIII. century like variety for tax paying and merchandise.

INCREASING PINOT NOIR COLOUR DENSITY THROUGH SEQUENTIAL INOCULATION OF FLOCCULENT COMMERCIAL WINE YEAST SPECIES

Vitis vinifera L. cv. Pinot noir can be challenging to manage in the winery as its thin skins require careful handling to ensure sufficient extraction of wine colour to promote colour stability during ageing.1 Literature has shown that fermentation with flocculent yeasts can increase red wine colour density.2 As consumers prefer greater colour density in red wines,3 the development of tools to increase colour density would be useful for the wine industry. This research explored the impact of interspecies sequential inoculation and co-flocculation of commercial yeast on Pinot noir wine colour.

Fingerprinting as approach to unlock black box of taste

The black box of taste is getting unlocked. The starting point is to distinguish taste from tasting. Consider taste as a product characteristic; tasting is a sensorial activity. Consequently, taste can be studied on a molecular level and therefore be assessed more objectively, whilst tasting is a human activity and by definition subjective.

DOES LIGNIN AN ACCEPTABLE MARKER OF GRAPESEED MATURATION AND QUALITY?

Usually the winemaker consider polyphenols from the grape berry as an actor of the wine quality. There are frequently consider as a marker of grape maturity. It is commonly known that winemaker consider tannins and anthocyanins as main polyphenol actors for winemaking practices and wine quality. Here we will focus on the characterisation of lignins in grape seeds. Previous studies suggest that the seed is lignified [1], which could explain the change in colour of the seed when it reaches maturity and thus provide a reliable indicator for describing the maturity stage in the seed.
