Phenolic composition and physicochemical analysis of wines made with the syrah grape under double pruning in the Brazilian high-altitude cerrado

Abstract

Wine growing has proven to be a development opportunity for agribusiness in several new regions of Brazil, including the federal district. There are more than ten existing wineries, established in the last five years. Through the double pruning system, which consists of trimming the growing shoots in the summer and positioning the ripening of the fruits in a cooler period of the season, the grapes are sought to ripen more completely. The syrah variety has shown excellent adaptation to this cycle management model. The objective of this study was to evaluate the physical-chemical and phenolic composition of wines made from the syrah variety in two harvests, 2022 and 2023, to understand the behaviour in the phenolic and technological ripening process of grapes on vines implemented in the federal district. Wines made from 100% of the Syrah variety were evaluated, 6 from the 2023 harvest and 3 from the 2022 harvest. We observed that wines made from different harvests showed differences in total phenolic composition, wines from the 2022 harvest presented higher values (76.68±10.42) than the 2023 harvest (67.05±5.89), p=0.0221. Regarding the physical-chemical composition, we did not observe statistical differences in alcoholic strength, total acidity, dry extract, density, and chlorides. However, we observed a statistical difference in the level of volatile acidity, wines from the 2023 harvest presented higher values, (9.19±0.345 meq/l), than those from the 2022 harvest, (6.16±0.350 meq/l), p<0.001. Although there are no statistical differences between vintages regarding the alcohol content of wines, it is observed that the average is higher than in other regions, such as in the south of the country, the average is 13.88±0.91 %v/v, with a maximum value of 15.44%v/v and a minimum of 12.38%v/v, thus demonstrating excellent technological maturity of the grape. total acidity levels also did not differ from the 2023 (91.90±5.15 meq/l) and 2022 (88.50±5.17 meq/l) harvests, however, it is possible to observe that the wines in question have excellent acidity, as a result of the thermal range present in this region, located around 1,000 m above sea level, which can reach up to 20ºc/day. More studies are needed to observe possible intra-region variations and the behaviour of different cultivars. However, the results obtained are auspicious regarding the quality of the wines in question, demonstrating a balance between the main factors involved, such as climate, soil, and relief. These characteristics will certainly be important for defining the terroir of this region, seeking its own identity, which will be constructed based on these and other analyses. The wine sector is growing exponentially in different regions of the country, which is why studies like this are necessary to recognize wines and their characteristics, seeking to present them to Brazilian consumers.

Composition phénolique et analyse physico-chimique de vins issus du cépage Syrah en double taille dans le cerrado d’altitude brésilien

La viticulture s’est avérée être une opportunité de développement pour l’agro-industrie dans plusieurs nouvelles régions du brésil, dont le district fédéral. Il existe actuellement plus de dix établissements vinicoles créés au cours des cinq dernières années. Grâce au système de double taille, qui consiste à tailler les pousses en croissance en été et à positionner la maturation des fruits dans une période plus fraîche de la saison, on cherche à faire mûrir les raisins plus complètement. Le cépage syrah a montré une excellente adaptation à ce modèle de gestion du cycle. L’objectif de cette étude était d’évaluer la composition physico-chimique et phénolique des vins issus du cépage syrah lors de deux récoltes, 2022 et 2023, afin de comprendre le comportement dans le processus de maturation phénolique et technologique des raisins sur vigne mis en œuvre dans le district fédéral . Des vins issus à 100% du cépage syrah ont été évalués, 6 de la récolte 2023 et 3 de la récolte 2022. Nous avons observé que les vins issus des différentes récoltes présentaient des différences de composition phénolique totale, les vins de la récolte 2022 présentaient des valeurs plus élevées. ​(76,68±10,42) que la récolte 2023 (67,05±5,89), p=0,0221. Dans la composition physico-chimique, nous n’avons pas observé de différences statistiques en termes de titre alcoométrique, d’acidité totale, d’extrait sec, de densité et de chlorures. Cependant, nous avons observé une différence statistique au niveau du niveau d’acidité volatile, les vins de la récolte 2023 présentaient des valeurs plus élevées, (9,19±0,345 meq/l), que la récolte 2022, (6,16±0,350 meq/l), p<0,001.bien qu’il n’y ait pas de différences statistiques entre les millésimes concernant la teneur en alcool des vins, entre les millésimes, on observe que la moyenne est plus élevée que dans d’autres régions, comme dans le sud du pays, la moyenne est de 13,88±0,91 %v/v. , avec une valeur maximale de 15,44%v/v et un minimum de 12,38%v/v, démontrant ainsi une excellente maturité technologique du raisin. Les niveaux d’acidité totale ne diffèrent pas non plus des récoltes de 2023 (91,90 ± 5,15 meq/l) et 2022 (88,50 ± 5,17 meq/l), mais il est possible de constater que les vins en question ont une excellente acidité, en raison de la plage thermique présente dans cette région, située à environ 1 000 m d’altitude, qui peut atteindre jusqu’à 20ºc/jour. Des études supplémentaires sont nécessaires pour observer d’éventuelles variations intra-régionales, ainsi que le comportement des différents cultivars. Cependant, les résultats obtenus sont très prometteurs quant à la qualité des vins concernés, démontrant un équilibre entre les principaux facteurs impliqués, comme le climat, le sol et le relief. Ces caractéristiques seront certainement importantes pour définir le terroir de cette région, en quête de sa propre identité, qui se construira sur la base de ces analyses et d’autres. Le secteur vitivinicole connaît une croissance exponentielle dans différentes régions du pays, c’est pourquoi des études comme celle-ci sont nécessaires pour reconnaître les vins et leurs caractéristiques, en cherchant à les présenter aux consommateurs brésiliens.

Composición fenólica y análisis fisicoquímico de vinos elaborados con la uva Syrah bajo doble poda en el cerrado de altura brasileño

La viticultura ha demostrado ser una oportunidad de desarrollo para la agroindustria en varias regiones nuevas de brasil, incluido el distrito federal. Actualmente, existen más de diez bodegas existentes, establecidas en los últimos cinco años. Mediante el sistema de doble poda, que consiste en recortar los sarmientos en crecimiento en verano y situar la maduración de los frutos en una época más fresca de la estación, se busca que la uva madure de forma más completa. La variedad syrah ha mostrado una excelente adaptación a este modelo de gestión del ciclo. El objetivo de este estudio fue evaluar la composición físico-química y fenólica de vinos elaborados con la variedad syrah en dos cosechas, 2022 y 2023, con el fin de comprender el comportamiento en el proceso de maduración fenólica y tecnológica de uvas en vides implementadas en el distrito federal . Se evaluaron vinos elaborados con un 100% de la variedad syrah, 6 de la cosecha 2023 y 3 de la cosecha 2022. Observamos que los vinos elaborados con diferentes cosechas presentaron diferencias en la composición fenólica total, los vinos de la cosecha 2022 presentaron valores superiores. ​(76.68±10.42) que cosecha 2023 (67.05±5.89), p=0.0221. En la composición físico-química no observamos diferencias estadísticas en grado alcohólico, acidez total, extracto seco, densidad y cloruros. Sin embargo, se observó una diferencia estadística en el nivel de acidez volátil, los vinos de la cosecha 2023 presentaron valores más altos, (9,19±0,345 meq/l), que los de la cosecha 2022, (6,16±0,350 meq/l), p<0,001.si bien no existen diferencias estadísticas entre añadas en cuanto al contenido alcohólico de los vinos, entre añadas se observa que el promedio es mayor que en otras regiones, como en el sur del país, el promedio es de 13,88±0,91 %v/v. , con un valor máximo de 15,44%v/v y un mínimo de 12,38%v/v, demostrando así una excelente madurez tecnológica de la uva. Los niveles de acidez total tampoco difirieron de las cosechas de 2023 (91,90±5,15 meq/l) y 2022 (88,50±5,17 meq/l), sin embargo es posible observar que los vinos en cuestión tienen una excelente acidez, producto de la rango térmico presente en esta región, situada alrededor de los 1.000 m sobre el nivel del mar, que puede alcanzar hasta los 20ºc/día. Se necesitan más estudios para observar posibles variaciones intrarregionales, así como el comportamiento de diferentes cultivares. Sin embargo, los resultados obtenidos son muy prometedores en cuanto a la calidad de los vinos en cuestión, demostrando un equilibrio entre los principales factores implicados, como el clima, el suelo y el relieve. Estas características sin duda serán importantes para definir el terroir de esta región, buscando una identidad propia, que se construirá a partir de estos y otros análisis. El sector vitivinícola está creciendo exponencialmente en diferentes regiones del país, por lo que estudios como este son necesarios para reconocer los vinos y sus características, buscando presentarlos a los consumidores brasileños.

Trends and challenges in International Wine Trade. The need for new strategies for companies and regions.

Trends already extended for more than 12 years show a decline in both consumption and international trade, particularly in volume. However, there are also positive signs in several categories of wine, segments and markets, as well as a better trend in terms of value. How are these trends affecting wine producers and distributors? Context and purpose of the study climate change is impacting wine typicity across the globe, raising concerns in wine regions historically renowned for the quality of their terroir. This study, based on seven years of data, investigates the potential adaptability of over 50 different varieties in the bordeaux wine region.

Is complex nutrition more advantageous than mineral nitrogen for the fermentative capacities of S. cerevisiae?

During alcoholic fermentation, nitrogen is an essential nutrient for yeast as it plays a key role in sugar transport and biosynthesis of wine aromatic compounds (thiols, esters, higher alcohols). The main issue of a lack in yeast assimilable nitrogen (yan) in winemaking is sluggish or stuck fermentations promoting the growth of alteration species which may lead to economic losses.
