Utilisation de données historiques pour caractériser le millésime en cours

Abstract

Cet article propose la formalisation d’un modèle paramétrique pour représenter l’accumulation des sucres dans les baies de raisin durant la maturation. Le test de ce modèle sur des jeux de données réels a permis de valider l’approche proposée. Une seconde partie est axée sur l’adaptation de la méthode pour permettre la simulation du comportement du millésime en cours dès les premiers relevés de maturité. Ce travail possède de multiples applications dans le domaine de l’aide à la décision. English version: This paper proposes the formalization of a parametrical model in order to represent sugar accumulation in grape berries during ripening. The model was tested on real data and provides results that enable the validation of the proposed approach. The second part is based on the method accommodation to simulate the behavior of the current vintage as soon as the first maturity measurements are available. This work could have several applications in the decision support field.

IMPACT OF THE WINES’ QUALITY ON THE WINE DISTILLATES’ ORGANOLEPTIC PROFILE

Brandy de Jerez (BJ) is a spirit drink made exclusively from spirits and wine distillates and is characterized by the use of casks for aging that previously contained Sherries. The quality and sensory complexity of BJ depend on the raw materials and some factors: grape variety, conditions during processing the wine and its distillation, as well as the aging in the cask. Therefore, the original compounds of the grapes from which it comes are of great interest (1 y 2) being in most cases the Airén variety. Their relationship with the quality of the musts and the wines obtained from them has been studied (3) and varies each year of harvest depending on the weather conditions (4).

Exploring the gene regulatory networks of WRKY family in grapevine (Vitis vinifera  L.) using DAP-Seq

The recent development of regulatory genomics has raised increasing interest in plant research since transcriptional regulation of genes plays a pivotal role in many biological processes. By shedding light on the target genes of the various transcription factors (TFs), it is therefore possible to infer the influence they exert on the different molecular mechanisms. In this regard, the attention was focused on WRKYs, a family of TFs almost exclusively found in plant species. In grapevine, WRKYs are involved in several biological processes, playing a key role in berry development, hormonal balance and signalling, biotic and abiotic stresses responses, and secondary metabolites biosynthesis.

L’étude “terroirs d’Anjou”: un exemple de caractérisation intégrée des terroirs viticoles, utilisable à l’échelle parcellaire

Natural factors of the production (“terroir” and vintage) are known as an important element for identifying wines by their genuine typicité and their authenticity. The program “Terroirs d’Anjou” (1994-1999) aims at bringing the necessary scientific basis for a rational and reasoned exploitation of the terroir.

Il lavoro di zonazione riveste un ruolo importante per capire le potenzialità e la vocazionalità di una specifica area viticola. La viticoltura dovrebbe essere vista in funzione dell’obiettivo enologico che si vuole realizzare e quindi particolare importanza riveste il risultato delle vinificazioni delle uve provenienti dai vigneti delle diverse aree della zona di produzione oggetto d’indagine. La zonazione dell’area a DOC Monti Lessini Durello ha preso in esame la varietà “Durella”, vitigno autoctono del territorio, che rappresenta la maggior parte della produzione vitivinicola della zona.
