Color stabilization properties of oenological tannins

Abstract

The use of oenological tannins is authorized for many years by the OIV and advised for color stabilization. For this reason, winemakers look for a better understanding of tannins/anthocyanins interactions to produce deeply colored wines with great color stability during aging. Consequently, the aim of this work, was to verify/confirm the effectiveness of oenological tannins on wine color stabilization to be applied as a new tool by winemakers. 

To achieved this, a model wine solution containing 50 mg/L of malvidin-3-O-monoglucoside was supplemented with 10, 20 and 40 g/hL of commercial tannins (quebracho, ellagitannin, gallotannin, grape-skin and grape-seed) or (-)-epicatechin used as reference. After 1, 7, 14 and 21 days, the full absorbance spectrum (400-800 nm) was measured to determine the CIELAB coordinates and the copigmentation index (new proposed index based on CIELAB parameters). In parallel, samples were injected in HPLC-MS-QTOF to quantified the malvidin-3-O-monoglucoside and its possible degradation products. 

The obtained results show that malvidin-3-O-glucoside concentration decrease during the time accompanied by the formation of two degradation products. However, malvidin-3-O-glucoside decrease differs according to the added tannins meanwhile degradation product formation is the same for all the tannins. In this way, botanical origin of oenological tannins influences their effectiveness. Indeed, gallotanins and grape tannins are the most efficient to improve color stabilization during ageing by copigmentation and by inducing the formation of new polymerized pigments respectively.

Based on this work, oenological tannins have been authorized by the OIV, to stabilize the color of red wines with the modification of the OENO-TECHNO 612 and 613 sheets.

Pierce’s disease of grapevines, a new threat to the wine industry in Southern Europe

Pierce’s disease (PD) is considered a potential threat to european viticulture (EPPO a2 list of pathogens since 1981). In the usa, infections caused by the vector-borne bacterium xylella fastidiosa have caused recurrent damage to vineyards in California and the southeastern states. However, vineyards in Europe have remained free of PD until recently, when it was first detected on the island of Mallorca in 2017. The reasons for the absence of PD in continental Europe have not been convincingly explained.

NIR based sensometric approach for consumer preference evaluation

Climate change has had a global impact on grape production, and as a result, developing table grape varieties that can withstand climate-related threats has become a significant goal. However, it is equally important to ensure that these new grape varieties meet the preferences of consumers. To achieve this goal, a procedure has been developed that combines sensory analysis with spectroscopic data collected in the NIR region. Each sample was analyzed using both traditional analytical techniques and non-destructive NIR spectroscopy.

Aromatic profile of six different clones of Chardonnay grape berries in Minas Gerais (Brazil)

Aromas are one of the key points in food analysis since they are related to character, quality and consequently consumer acceptance. It is not different in the winery industry, where the aromatic profile is a combination of viticultural and oenological practices. Based on the development of more aromatic clones and on the potential to produce sparkling wines at Caldas, in the southern region of Minas Gerais (Brazil) (21°55´S and 46°23´W, altitude 1,100m), the aim of this work was the determination of volatile compounds in six different clones of Chardonnay grape berries to better understand which compounds add bouquet to the wine, and additionally comprehend the impacts of the edaphoclimatic and annual conditions on the improvement of grape-growing and winemaking practices.

Classification of “Valpolicella Superiore” wines in relation to aromatic composition: influence of geographical origin, vintage and aging
