Evaluation of glutathione content in four white varieties in the d.o. Ca. Rioja (Spain)

Abstract

AIM: Glutathione is a tripeptide that is mainly found in reduced form in grapes. It generates during the maturation of the grape, increasing significantly after veraison [1]. It plays a relevant role in the prevention of oxidative processes due to its high antioxidant activity. Its content in the grape is influenced by many factors (variety, vintage, cultural practices, nitrogen nutrition …) [2]. In musts and wines, it undergoes modifications due to oxygen exposure, tyrosinase activity, maceration time, pressing, yeast strain…[3]. The aim of this work was to evaluate the content of glutathione in the grape of four white varieties: Tempranillo Blanco, Maturana Blanca, Garnacha Blanca and Viura.

METHODS: The study was carried out during three seasons (2017, 2018 and 2019) in a vineyard located in the D.O.Ca. Rioja (Spain). On the other hand, the influence of different vineyard locations on the content of this compound in the indicated varieties was also analyzed. Glutathione determination was carried out by HPLC by automatic derivatization in precolumn with OPA. The previous extraction in the grape was carried out with HCl/EDTA [4].

RESULTS: The results obtained showed important varietal differences in the glutathione content of the grape in the white varieties studied. The highest concentration was obtained in the Tempranillo Blanco variety, although without significant differences in comparison to Viura, while the lowest levels corresponded to Maturana Blanca and Garnacha Blanca. Also, the characteristics of the vintage also influenced its concentration, although the varietal differences were maintained. The location of the vineyard showed a variable effect depending on the vinifera, and the characteristics of the vintage in the case of Tempranillo Blanco.

CONCLUSIONS

These results confirm that the variety is one of the most influential factors in the glutathione content in grapes. Tempranillo Blanco has high levels of this compound, which can help preserve the quality of your wines.

THE ROLE OF CELL WALL POLYSACCHARIDES IN THE EXTRACTION OF ANTHOCYANINS AND TANNINS: RESULTS, PERSPECTIVES OF A MORE POSITIVE CONTRIBUTION

The composition of grape berry cell walls was studied on two grape varieties, two years and two maturation levels at the same time as the extraction of anthocyanins and tannins. The chemical composition of skins, seeds, and pulps, focused on polyphenols and polysaccharides, was compared to the chemical composition in polyphenols after extraction from the skins in model solutions or after wine making of the berries. Polyphenols were mainly characterized by UPLC-MS and HPLC-SEC. Polysaccharides were characterized by analysis of the neutral sugar compositions, and also by the CoMPP (comprehensive micropolymer profiling) analysis, a new method which targets the functional groups of cell wall polysaccharides.

Effect of different packaging materials on table grape quality preservation during cold storage

During cold storage, grapes undergo changes that affect their visual, mechanical, and organoleptic properties, potentially impacting quality and negatively influencing consumer acceptance. Key parameters include uniform color, crunchiness, and flesh consistency. We evaluated the influence of two distinct packaging methods on the chromatic characteristics, hardness, and pedicel detachment resistance of fourteen new seedless white and red grape varieties during cold storage. These factors are crucial for maintaining the quality of the product and extending its shelf-life. The novel grape varieties were obtained through a breeding program at CREA-VE of Turi, Southern Italy.

EFFECT OF MANNOPROTEIN-RICH EXTRACTS FROM WINE LEES ON PHENOLICCOMPOSITION AND COLOUR OF RED WINE

In 2022, wine production was estimated at around 260 million hl. This high production rate implies to generate a large amount of by-products, which include grape pomace, grape stalks and wine lees. It is estimated that processing 100 tons of grapes leads to ~ 22 tons of by-products from which ~ 6 tons are lees [1]. Wine lees are a sludge-looking material mostly made of dead and living yeast cells, yeast debris and other particles that precipitate at the bottom of wine tanks after alcoholic fermentation. Unlike grape pomace or grape stalks, few strategies have been proposed for the recovery and valorisation of wine less [2].

 The manipulation of the genetic basis controlling grapevine adaptation and phenotypic plasticity can be performed either by classical genetics or biotechnologies.

Precipitation variability in a temperate coastal region and how it affects Tannat and Albariño cultivars 

Climate is one of the main components that defines the development and behavior of the plant, conditioning the health status and the final quality of the grapes. In temperate coastal climates such as in Uruguay (latitude 35° S, longitude 55° O), precipitations during the growing season present high interannual variability, with a average of 100 mm per month. This variability means that plants must adapt to conditions from one year to the next.
