Effect of quercus alba oak barrels from different forest on the volatile composition of Tempranillo wines

Abstract

AIM: The species and origin used for red wine oak aging determines the physiological composition of the wood and thus the finished wines. In America, oak is grown primarily in the states of Virginia, Missouri, Kentucky, Oregon, Ohio, Minnesota, Wisconsin and California. The aim of this study is to analyze how the choice of barrels made with Quercus Alba oak from different geographic areas of the United States (Missouri, Kentucky, Ohio and Pennsylvania) influences the volatile composition of the Tempranillo wines.

METHODS: In this study, three different Tempranillo wines were aged for 6 months in new 225-liter American oak barrels (medium toast degree) from different forest of the United States: Missouri, Kentucky, Ohio and Pennsylvania. These barrels were made by the Toneleria Murua in 2018 and the experiences were carried out in three wineries of the D.O.Ca Rioja. Samples were taken when wine was introduced into the barrel, and after 6 months of aging. The volatile compounds of the wines were quantified by gas chromatography with a mass detector (GC-MS) after liquid-liquid extraction of the volatile fraction as described by Oliveira et al. (2008).

RESULTS: The different oak origins did not affect the total content of the volatile families of C6 alcohols, acetates, volatile acids, lactones, carbonyl compounds and volatile phenols. On the contrary, the wines aged on oak from Pennsylvania showed significantly higher values of higher alcohols and ethyl esters. Regarding the individual compounds, wines aged on Pennsylvania barrels showed higher concentrations of whisky lactones. 

CONCLUSIONS

The results obtained in the present study could help for selecting the oak origin that best suited to the different wines.

Rootstock influence on xylem embolized vulnerability and scion behavior under severe water deficit

Severe water stress events can induce cavitation damage by xylem embolism in grapevine, diminishing plant hydraulic conductance. This work aimed to determine the rootstock effects on 1) xylem embolism vulnerability to understand its function failure under severe drought, including segmentation processes from leaf to root; and 2) hydraulic conductance across water deficit and its recovery. For this purpose, two complementary experiments were performed in one-year-old Vitis vinifera cv. Tempranillo grafted onto two different rootstocks (110-Richter and SO4) under well-watered 12L pot conditions. In experiment 1, the water-stress induced xylem embolism was monitored in leaves and stems, above and below grafting-point, by using “Cavicam” for determining the percentage of embolized vessels (at P12, P50 and P88).

Novel contribution to the study of mouth-feel properties in wines

In general, there is a well-established lexicon related to wine aroma and taste properties; however mouth-feel-related vocabulary usually includes heterogeneous, multimodal and personalized terms. Gawel et al.
(2000) published a wheel related to mouthfeel properties of red wine. However, its use in scientific publications has been limited. The authors accepted that the approach had certain limitations as it included redundant and terms with hedonic tone and some others were absent. It is of high interest to generate a mouth-feel lexicon and finding the chemical compound or group of compounds responsible for such properties in red wine. In the present work a chemical fractionation method has been developed.

Update knowledge about the presence of condensed tannins in grapes and their contributions to astringency perception

Condensed tannin is a principle group of polyphenol compounds derived from grape, greatly contributing to the bioactivity and the sensory perception of wine. Condensed tannins present as a heterogeneous mixture in nature involving various degrees of both polymerization and galloylation. Riesling as a model to irrigate white wine grape varieties in arid climates

Regulated deficit irrigation (RDI) is a common viticultural practice for wine grape production. In addition to the potential improvement of water use efficiency, the adoption of this technique favors smaller canopies with higher levels of fruit sun exposure, enhancing quality attributes associated with red wine grapes such as smaller berries with higher tannins and anthocyanins. However, these quality attributes do not necessarily transfer to white wine grapes. The goal of this project was to assess whether partial rootzone drying (PRD) is more suited than RDI to grow high-end white wine grapes in arid climates, especially aromatic varieties, using Riesling as a model.
