Favoring the formation of volatile compounds and their precursors in must and wine represent one of the principal goals during winemaking technology. In recent years, most attention has been placed on using glycosidases to enlarge the aroma profile of white wines. The effect of enzymes makes odorless glycosidically-bound precursors be converted into aromatic compounds. This paper focuses to study the influence of enzymes (pectolytic and β-glycosides) administered before alcoholic fermentation, even if most studies analyze their use in different winemaking stages. Two semi-aromatic varieties such as Fetească regală and Sauvignon blanc were chosen.

Atypical ageing (ATA) is a wine aroma fault occurring in white wines characterised by an early loss of varietal aroma as well as nuances of wet mop, acacia blossom, shoe polish and dirty rag among others. 2-aminoacetophenone (2AAP) – a degradation product of indole-3-acetic acid (IAA) – has been described as the major odour-active compound and chemical marker responsible for this off-flavour. Depending on the aroma intensity of wines, its odour threshold varies from 0.5 to 10.5 μg/L. It seems that a stress reaction in the vineyard triggered by climatic, pedological and viticultural factors can ultimately cause ATA development in wines and therefore shorten their shelf-life.

Impact of aging on dimethyl sulfide (DMS) in Corvina and Corvinone wines

Amarone is an Italian red wine produced in the Valpolicella area, in north-eastern Italy. Due to its elaboration with withered grapes, Amarone is a rather unique example of dry red wine. However, there is very limited data so far concerning the volatile composition of commercial Amarone wines, which also undergo a cask aging of 2-4 years before release. The present work aims at characterizing the aroma composition of Amarone and to elucidate the relationships between chemical composition and sensory characters.
