Impact of harvest date on the terroir expression and the aroma profile of Touraine Sauvignon wines
L’objectif d’une étude sur trois années vise, pour des terroirs différents et connus pour le profil des vins qui en sont issus, à exploiter au mieux le potentiel des raisins en optimisant la date de récolte ; pour chacun des trois terroirs, les minivinifications sont réalisées à partir de trois dates de récolte . Il s’avère, grâce à un suivi analytique important (sol, précurseurs et arômes) et une caractérisation organoleptique bien encadrée (analyse sensorielle pertinente et objective), que le choix de la date de récolte, en fonction du terroir, a une incidence sur le profil du vin et devient un outil pour l’élaborateur.

La société et l’état imposent plus que jamais à la viticulture française de prendre en compte ses impacts environnementaux tout en produisant des vins de qualité. Après avoir présenté ces impacts, les auteurs exposent la méthode de l’Analyse du Cycle de Vie. Ils proposent une démarche pour sa mise au point pour évaluer les impacts environnementaux en viticulture AOP en Val de Loire dans le cadre de l’évaluation de la compatibilité des objectifs qualitatifs et environnementaux de la production de raisins de cuve.

Proximal sensors are becoming widely used in precision viticulture, due to the quick, easy and non-invasive identification of soil spatial variability. The apparent soil electrical conductivity (ECa) is the main parameter measured by sensors, which is correlated to many factors, like soil water content, salinity, clay content and mineralogy, rock fragments, bulk density, and porosity.

Climate change – variety change?
In Franconia, the northern part of Bavaria in Germany, climate change, visible in earlier bud break, advanced flowering and earlier grape maturity, leads to a decrease of traditionally cultivated early ripening aromatic white wine varieties as Mueller-Thurgau (30 % of the wine growing area) and Bacchus (12 %). With the predicted rise of temperature in all European wine regions the conditions for white wine grape varieties will decline and the grapes themselves will lose a part of their aromatic and fruity expression. Variety change towards the cultivation of later ripening white wine varieties is a very expensive and long-term process, and must be accompanied by special marketing efforts.
