Evolution of several biochemical compounds during the development of Merlot wine in the vinegrowing “Terroir” of Valea Călugăreasa

The qualitative and quantitative distribution of the phenolic compounds in red wines depends on cultivars features, on grapes maturation state, on grapes processing technology including must obtention, as well as on maceration-fermentation method (Margheri, 1981). The last two factors are responsible for the different phenolic composition of the wines produced from the same cultivar.

Characterization of vineyard sites for quality wine production using meteorological, soil chemical and physical data

The quality of grapevines measured by yield and must density in the northern part of Europe -conditions can be characterized as a type of “cool climate” – vary strongly from year to year and from one production site to another, i.e. différences in must densities can range from 30 to 50 °Oe. An explanation may be changes of weather conditions during critical developmental stages of the grapevines (2, 3, 5). These can be categorized as “macro climatic” influences.

Interaction among grapevine cultivars (Sangiovese, Cabernet-Sauvignon and Merlot) and site of cultivation in Bolgheri (Tuscany)

Different “landscape unit” have been identified in Bolgheri area (a viticultural appellation in the Tirrenian coast of Tuscany) by the aid of pedological, landscape and agronomic observations in the 1992-1993 period. In all cultivar (Sangiovese, Cabernet Sauvignon and Merlot) x landscape unit combinations, experimental plots were chosen in homogeneous vineyards, single cordon trained (about 3300-4500 vines/hectare). Grape maturation was studied by weekly samples of berries from veraison to vintage in the 1992-1995 period. At harvest yield and must composition traits were measured and, from the most représentative plots, sixty kilograms of grapes were harvested each year and vinified according to a standardised scheme. Wines were evaluated by standard chemical and sensory analyses.

Les motivations du vigneron en quête de l’expression “terroir”

During the 1985 harvest, I was able to notice in the taste perception a break in the harmony of the wine during even partial blends of grapes from different plots. At the same time, I noted a good reaction from customers for greater product customization. As a result, I was led to seek the objective limits of the terroir of a cuvée and by a constant and permanent refinement of the parameters specific to each of the terroirs.

Les terroirs viticoles ont une histoire

The historian starts from a scientific, rigorous and recent definition of the wine-growing region. “A viticultural terroir is made up of several homogeneous units: geological and pedological elements (texture,
grain size, thickness, mineralogical nature, chemical components), geomorphological (altitude, slope, exposure), climatological (rainfall, temperature, insolation)”. Absent from this definition, the man is fortunately reintroduced a little further. By associating viticulture and winemaking, it forms a “couple” with the terroir and this couple.

The notion of terroir covers multiple components, from geology, pedology, geomorphology and climatology (Doledec, 1995), to aspects that are less well identified but which also intervene in the “typicality” of wines. This justifies the “zoning” approach (Moncomble and Panigaï, 1990) to define homogeneous areas, under the same agro-viticultural management and also identified at the product level (Morlat and Asselin, 1992).

The northern vineyards produce wines with a high aromatic richness. The wines of Alsace are appreciated for the diversity of their aromas, the typicality of which was for a long time judged mainly according to the grape variety of origin. Alsatian winegrowers have however widely sensed the importance of the environment of the vine on the quality of the wines. Efforts are made to try to harmonize in a reasoned way the interaction between the natural environment and the plant material with a view to developing the character of the grape variety through the fine expression of the terroir and making the quality and typicality even more inimitable. wines produced in Alsace.

Différenciation mésoclimatique des terroirs alsaciens et relation avec les paramètres du milieu naturel

The influence of climatic conditions on the development of the vine and on the quality of the wines no longer needs to be demonstrated at the scale of the vineyard, by the regional climatic characteristics, determining on this scale the viticultural potentialities (Huglin, 1978; Branas, 1946; Riou et al ., 1994); but also on a local scale, at the level of the basic terroir unit (Morlat, 1989), by the landscape differentiation of the natural environment inducing climatic variability within the same vineyard, and partly explaining differences in functioning of the vine, in connection with the processes of maturation and the quality of the wine (Becker, 1977 and 1984; Morlat, 1989 and Lebon, 1993a). According to these authors, the climatic diversity in a wine region constitutes in addition to the edaphic component, an important component of characterization of the Basic Terroir Units (UTB).

Natural factors such as the environment in which the vine is grown play an important role in the quality of the wine. If you want to produce a good wine, it is indeed essential to produce quality grapes. To do this, we must enhance and optimize the terroir effect which, for the moment, plays a role that is not very well known. It is therefore essential, for example, to have scientifically established and well quantifiable relationships in order to have the system of areas of controlled origin accepted. R. Morlat (1989) and G. Seguin (1970) have already carried out studies on the role of certain soil factors on grape quality. In particular, they showed the importance of soil temperature and water content.

Quelles cibles moléculaires pourraient expliquer l’effet du terroir sur la composition des baies en sucres et acides?

Le manque de connaissances concernant la physiologie de la maturation du raisin a longtemps interdit d’interpréter l’effet du terroir ou du millésime sur la qualité des vendanges en termes moléculaires. L’hypothèse selon laquelle c’est la perméabilité membranaire qui contrôlerait le sens comme l’intensité du stockage des acides est pourtant déjà ancienne (1). L’étude du transport des acides organiques et de son coût énergétique permet d’avancer certaines hypothèses concemant les sites potentiels de la régulation du contenu en sucres et acides du raisin sous l’effet de paramètres environnementaux.

Effect of “Terroir” on quanti-qualitative paramethers of “vino nobile di Montepulciano”

In this last ten years period, there has been many integrated and interdisciplinary studies to determine the aptitude of different zones to viticulture (Lulli et al., 1989 ; Costantini, 1992 ; Fregoni et al., 1992). The researches needed some différent knowledges about environment characteristics (soil, climate), ecology, vineyard management, vine genetic, winemaking and sensory analysis. The interaction of all these knowledge produced the assessment about the environmental vocation (Scienza et al., 1992). By means of this metodology, the “viticultural vocation” joined the word “zoning”, that is the territory parting for its ecopedological and geographical characteristics in relation to adaptative answer of winegrape (Morlat, 1989).

Développement de l’appareil végétatif et maturation du raisin sur quatre sols de Pomerol en 1995

The Pomerol vineyard, located 35 km east of Bordeaux, covers around 800 ha on the left bank of the Isle. There is a system of fluvial terraces with more or less coarse gravel and pebble spreading, resting on a Tertiary substratum ranging from the Middle to Upper Eocene to the Lower Oligocene (Dubreuilh, 1993). This interweaving of terraces of varying thickness results in a brutal superposition of differentiated materials which give rise to various types of soil. Several site studies in this sector of the Libounais show significant morphological and analytical differences from one point to another (Guilloux et al ., 1978; Duteau, 1982; Van Leeuwen et al.., 1989). The distribution of the soils of the Pomerol vineyard was studied and resulted in a cartography at 1/25000th (Merouge, 1995).
