A «terroir» is a group of vineyards from the same region, belonging to a specific appellation, and sharing the same type of soil, weather conditions, grapes and wine making savoir-faire, which contribute its specific personality to the wine. White wine variety «Rebula» or «Ribolla gialla» is a local and traditional variety, which is mentioned already in XIII. century like variety for tax paying and merchandise.

In a previous zoning program (1998-2002), climatic and pedological factors were able to distinguish 14 terroir within the Soave DOC area where wine characteristics are well recognizable. Nevertheless, in the past vinegrowers identified several vineyards where a better quality of the grapes and wines could be obtained. So, « beyond the zonation » will aim to suggest a new methodology to characterise the Cru, starting with 15 vineyards that were selected in the Soave Classico DOC area. In the year 2005, a meteorological station was positioned in each vineyard and temperature data were collected; because of the limited area of investigation, only 3 rain sensors were set up.

Terroirs represent a heritage that must be studied and managed with appropriate methods; recourse to agronomic and oenological sciences alone is necessary, but is in no way sufficient without the contribution of the humanities.

The terroir is today the most important factor of production and development in the wine sector. In a context where the commercial challenge is taking place all over the place, the distinction between traditional and “new” producing countries is not only a geographical, cultural and technical counter position but also, and above all, a legal one. Indeed, the system of standards present in the “old world” (plantation rights, production decrees, yields per hectare, etc.) which may represent, in the short term on the global market, constraints to development and product innovation must become an opportunity. But threats become opportunities, if we work, from the vine to the market, via communication, more on the elements of difference than on those of affinity.
