Different “landscape unit” have been identified in Bolgheri area (a viticultural appellation in the Tirrenian coast of Tuscany) by the aid of pedological, landscape and agronomic observations in the 1992-1993 period. In all cultivar (Sangiovese, Cabernet Sauvignon and Merlot) x landscape unit combinations, experimental plots were chosen in homogeneous vineyards, single cordon trained (about 3300-4500 vines/hectare). Grape maturation was studied by weekly samples of berries from veraison to vintage in the 1992-1995 period. At harvest yield and must composition traits were measured and, from the most représentative plots, sixty kilograms of grapes were harvested each year and vinified according to a standardised scheme. Wines were evaluated by standard chemical and sensory analyses.

Face à l’enjeu d’affirmer et de mieux comprendre la spécificité des vins en relation avec leur origine, la notion de « terroir », avec la richesse de sens et la diversité des perspectives qui l’éclairent, se révèle la clef de voûte de la production et de la valorisation de vins personnalisés et typiques. Asseoir la connaissance des principaux terroirs de la Vallée du Rhône sur des bases autres que celles, jusqu’alors essentiellement empiriques, invoquées dans la seconde grande région française productrice de vins d’AOC, constitue un projet conforme à l’intérêt voué à cet enjeu d’actualité.

Depuis un an, nous essayons de mettre en place un projet de développement socio-économique et culturel d’une zone située essentiellement au sud de la Garonne et à cheval sur 3 départements (le Lot et Garonne, le Gers et le Tam et Garonne) et sur 2 régions (l’Aquitaine et Midi Pyrénées): le pays du Brulhois, “porte de la Gascogne”.

During the 1985 harvest, I was able to notice in the taste perception a break in the harmony of the wine during even partial blends of grapes from different plots. At the same time, I noted a good reaction from customers for greater product customization. As a result, I was led to seek the objective limits of the terroir of a cuvée and by a constant and permanent refinement of the parameters specific to each of the terroirs.

The reflections presented here are a synthesis of a set of research on the construction of a scientific logic concerning the relations between the terroir, the vine, the wine, and on the study of a product, the wine, considered as the resulting from many interactions between factors of various orders. This work has benefited greatly from discussions of an epistemological as well as a technical nature with all the researchers at URVV (Angers) and with our colleagues at the Institut National des Appellations d’Origine, over several years.

Work aimed at understanding the relationship between a terroir, in the agronomic sense, and the physico-chemical characteristics of grapes or wine are numerous today, as evidenced by the program of this symposium. But for an economist, the central question remains to know how the terroir can intervene in the construction of the economic value of wine and in the differentiation of its prices. Is the terroir effect recognized by the end consumer or is it only an internal adjustment variable in the production systems? Through which indicators can this terroir effect be managed by the various operators in the sector? In the end, isn’t it better to invoke a “territorial effect” that the actors can build, and of which the terroir would be one of the possible components?

The designations of origin of the Loire Valley wine have been recognized according to customs and notoriety established over the centuries since the Middle Ages. In each of these basins, there is a wide range of appellations of origin which has been established according to a logic which may not seem obvious to the uninformed.

At the same time it is asserted that “The term is a mere common noun. Unprotectable and therefore unprotected” (4).
